This soup can be cooked without soaking, or after a quick soak and cook in about 40 minutes. We recommend cooking the soup with 1 chopped potato; after cooking you can puree everything with a blender and season the resulting cream with extra virgin olive oil, heated separately, and 3/4 sprig of fresh rosemary.
