Bontout, Tasting notes:
It has a fine and elegant yellow colour. The bouquet is elegant and balanced with citrus and bread crust aromas, the taste is creamy and thanks to the very fine bubbles it is delicate and enveloping.
Bontout sparkling wine is produced using the Martinotti method. The sparkling wine base is harvested early and after fermentation remains in steel for ageing. Foaming in atuoclave is then followed by a period of approximately 2 months of maturation on the lees.

The history of Gramineta goes back about two centuries. The ancestors of the family that founded the company, in order to escape from malaria, a disease that was very present in the coastal area in the 1800s, were forced to sell their possessions and land in the Castiglione della Pescaia area to buy land in the Roccastrada area to cultivate olive trees and vines. Podere Scovaventi was founded by Luca De Filippo and Carolina Rosi, who used to come here to retreat and regenerate in the breaks between theatre tours.
Having fallen in love with the countryside, expert gourmets, Carolina and Luca slowly began to restore the farmhouse, improve the soil and prepare preserves with the many products the garden offered them.
In 2015, they acquire olive groves in the vicinity of the company with other native varieties, thus taking production from family consumption to external distribution. In the same 2015, however, Luca passed away and Carolina decided to pursue this dream alone.

In the middle of the field is a large maritime pine tree that our great-grandfather planted to find some shade on hot summer days. This pine tree, which grew solitary, became a 'big pine tree' in width, hence the name Pingrosso. Shortened to Pingro, for simplicity's sake. Today that pine has become our symbol, impossible not to notice.

Cryomaceration is carried out in stainless steel on the skins at low temperatures for 24 hours, alcoholic fermentation always takes place in stainless steel at controlled temperatures for 20 days, refinement takes place in the bottle for 2 months

It has a ruby red colour, the bouquet presents notes of red fruits and undergrowth, savoury and with a fresh finish.

The winery was created through the redevelopment of a beautiful 30-year-old vineyard in Maremma that gave birth to Fihaia Rosso 2021 and 2022. The project was born to create a wine community made according to traditional and simple methods, aimed at freshness and that is great for both ready drinking and bottle aging.
The wines of this reality are united thanks to each other and distinguished by innovative winemaking, whole cluster fermentations and prolonged carbonic macerations, early harvests and lower ph, these methods are implemented mainly to reduce the impact of climate change that increasingly leads to over-ripening of grapes
Oatmeal soup Podere Pereto, How to use:
This soup can be cooked without soaking. It consists only of cereals and can be combined with legumes to form a complete single dish.
Recipe for 4 persons: Pour 200 g soup into 2 l cold water accompanied by 2 diced carrots, 1 celery stalk and 1 onion and salt to taste. Bring to the boil and leave on the stove for 35 minutes. Season with slightly warmed EVO oil and freshly chopped rosemary and thyme.
