Antonio Mattei
Antonio Mattei was a 19th-century Florentine confectioner, famous for creating one of Italy's most renowned biscuits: the Prato biscuit, or cantuccio. In 1858, Antonio inherited the family pastry shop and began experimenting with new recipes, including that of cantucci. These biscuits, made from flour, eggs, sugar, almonds and pine nuts, were baked twice to make them crispy and long-lasting, ideal for storage during long sea voyages. Antonio Mattei's biscuit factory soon became famous regionally and nationally, so much so that in 1895 it was chosen to represent Tuscany at the International Exhibition in Bordeaux. Since then, the Prato biscuit has become a symbol of Tuscan cuisine and one of the best-loved sweets in Italy and abroad.

Caseificio Quadalti
The Quadalti farm was founded in 1929 in the heart of the Tuscan Maremma and is family-run. The company has developed over the years with the purchase of plots of land, cultivating around 200 hectares to date. Crops are based on the cultivation of cereals, fodder and pastureland to feed the sheep. Today, the farm raises a total of 2000 free-stall Sardinian dairy sheep. The sheep are fed an accurate and balanced diet using their own fodder and cereals, thus guaranteeing the production of high quality milk. In 2000, the farm evolved with the addition of a dairy, transforming milk into dairy products and various types of cheeses made from Maremma sheep.

Mieleria Rossi Novaro:
Mieleria Rossi Novaro was founded in the 1960s in Casentino. It was in these mountains that Novaro, the founder, developed a passion for bees and honey production. The settled business soon became nomadic in order to diversify the types of honey produced, searching for the plants and essences loved by bees. The hives were moved partly to Maremma, far from sources of pollution. Thanks to the proximity to the sea and the mild climate, it is possible to produce light-coloured honeys, such as sunflower, clover and sulla. Over the years, Novaro expanded his business and the ever-increasing number of hives convinced him to move permanently to Grosseto, while maintaining a close relationship with his homeland, where he continues to produce forest and chestnut honey. In the workshop at the headquarters, fruit is processed to produce extra jams, compotes to accompany cheese and fruit in syrup, as well as honey-based gastronomic specialities and much more. Le Fontacce
The farm " Le fontacce" was born in 2008, on a farm existing since the beginning of 1800, is certified organic on all its products. Le Fontacce is a producer of the famous Fagiolo Zolfino Slow Food which is so called for its pale yellow color like sulfur, has a round shape and its pasta is creamy and exceptionally tasty. Traditionally it is sown on the hundredth day of the year, also called by farmers “day of the hundred”. It is very connected to climatic conditions and often produces a very small harvest, so much that its cultivation was almost abandoned, in preference to beans having a more reliable yield.

In 1928, the young Chiaverini brothers decided to open a small company for the production of jams and preserves, just outside the walls of Florence.
After a few years, the Chiaverini brothers' jams were not only in demand in grocery shops: 5 kg jars were introduced to meet the demands of pastry shops as well. Success increased production; the large pots created to cook fruit and sugar soon gave way to kettles designed by the founders themselves, in order to double production.
Attention to market trends and orientations then led Fratelli Chiaverini to start producing jams and marmalades with organically grown fruit.

The grapes are harvested strictly by hand and transported in small plastic crates. Vinification takes place by pressing the whole grapes at very low pressure in order to avoid the extraction of undesirable substances.
Intense ruby red in colour, the bouquet opens with notes of red fruit followed by spicy nuances. The palate is structured and harmonious with noticeable but well-integrated tannins. Alcohol content 14%
Tenuta di Badiola
Located in the heart of the Maremma, near Castiglione Della Pescaia, is the Tenuta di Badiola. Built in the mid-19th century by the Grand Duke of Tuscany, it boasts one of the highest expressions of the biodiversity of the Mediterranean maquis, comprising more than 500 hectares of land divided between vineyards, olive groves, hillsides and woods.The Acquagiusta vineyards cover 30 hectares of the estate and are divided into two vineyards. They have been positioned by carefully studying the exposure of the plants to the various elements in order to recreate the best conditions for their adaptation and to make the most of each natural element.
The wines from these vineyards are created with the utmost respect for natural processes, so that the grapes are enhanced to the fullest and the characteristics of the terroir are not altered. This process also allows the company to create an authentic and inimitable product.
How to use the Biroldo della Garfagnana:
The processing of Biroldo is guaranteed by the Slow Food regulations, which require that the pig’s head, heart, tongue, rind and lung are cooked in a cauldron for about three hours. After boning the head, all the boiled meat is cut into small pieces and mixed with squares of lard, blood, salt, pepper, cinnamon, nutmeg, coriander and cloves. The sausage is manually stuffed into the bladder or stomach (buzzetto) of the pig, which is then sewn up and boiled for another three hours in the broth in which the meat was previously cooked. The Biroldo is then placed on a shelf and left to cool in the air to facilitate draining and fat loss. The sausage is naturally free of preservatives, colour stabilisers and thickeners and the local people used to eat it cold, cut with a knife and accompanied by the typical local potato bread or polenta di neccio made with chestnut flour.
Garfagnana Master Butcher: Antica Norcineria
The producer, Antica Norcineria, master butchers for four generations. Their story began in the post-war period on the slopes of the Apuan Alps, in the Serchio Valley where the large chestnut forests and terraces sown with spelt bear witness to an ancient rural tradition that is still preserved today. In the beginning, the production and marketing of typical products such as lard, sausage and soppressata was a source of pride for the Antica Norcineria, which became a reference brand for all the genuine products of the Media Valle, Garfagnana and surrounding areas. Today, thanks to them, the peasant memory handed down by their ancestors is handed down and the culture of eating healthy and well is spread. In working the raw materials, L’Antica Norcineria respects the ancient tradition using the processing methods of the past. In fact, all-natural products are used in the preparation of cold cuts.

That of Poggio Nibbiale is a special story, which begins far away, in Germany... The Buchheim family had always dreamed of having a vineyard in Tuscany. Their wish came true when the Poggio Nibbiale winery was founded in 1998. Their dream of cultivating wine in the beautiful scenery of southern Tuscany became reality. The vineyards of Poggio Nibbiale are located in the hills of Maremma between Scansano and Magliano, 300 metres above the Tyrrhenian Sea, with a magnificent view of Giglio Island, Elba, Montecristo and the Monte Argentario peninsula.

Antico Pastificio Morelli 1860 has been making pasta in Tuscany for five generations, using artisanal techniques, they produce both classic and very special dry pastas with unique taste and characteristics. Baggiolo produces juices, compotes and fruit-based sauces at an altitude of 1400 metres. Living above 1000m altitude means a change of perspective. Respect for nature, passion for the land, the quest for a healthy life and natural food are feelings that are stronger, more tenacious in the mountains. In Abetone, the woods and snow-capped peaks tell of great ski champions, but in the high-altitude heaths, the undisputed protagonist of the stories is the wild bilberry, which has always been harvested here in large quantities. Thus began the story of Baggiolo, at 1400 metres above sea level, with Leandro and Marilena who, in the 1980s, opened a small workshop to process the fruits of the undergrowth. Production of the first jams and juices began, following recipes handed down from generation to generation. Only the best raw materials have always been chosen, processed by skilful hands that know how to give the right spreadability to the jams, making them easy to spread on bread.
