Mieleria Rossi Novaro was founded in the 1960s in Casentino. It was in these mountains that Novaro, the founder, developed a passion for bees and honey production. The hives were moved partly to Maremma, far from sources of pollution. Podere Scovaventi was founded by Luca De Filippo and Carolina Rosi, who used to come here to retreat and regenerate in the breaks between theatre tours.
Having fallen in love with the countryside, expert gourmets, Carolina and Luca slowly began to restore the farmhouse, improve the soil and prepare preserves with the many products the garden offered them.
In 2015, they acquire olive groves in the vicinity of the company with other native varieties, thus taking production from family consumption to external distribution. In the same 2015, however, Luca passed away and Carolina decided to pursue this dream alone.
The company creates many varieties of products in its territory, pickles, jams, honeys and many others; the quality of these products comes from tradition and love for the land and its fruits.
Tuna belly Conserveria Tonnina
Tuna belly is the fatty part located in the ventral area of the fish, and is considered the most valuable and tasty part.
Conserveria Tonnina
The conserveria tonnina takes its name from a specific processing of a part of the tuna fish typical of the island of Elba. The shop is located near the historic cove in Portoferraio, in front of the fishermen’s boats. Here, traditional recipes with the original flavour of the ancient Elban tradition are prepared and preserved, faithfully following the methods, customs and recipes of seafaring custom. One of the values that the Conserveria Tonnina boasts is the quality of the fish products, all caught in the sea adjacent to Elba and in Italy. The products are diverse and undergo specific processing, the most commonly used fish being tuna, anchovies, skipjack and mackerel. The products are rich in omega 3 and protein, and the processing and preservation contribute to maintaining the flavour without altering it.

Antonio Mattei was a 19th-century Florentine confectioner, famous for creating one of Italy's most renowned biscuits: the Prato biscuit, or cantuccio. In 1858, Antonio inherited the family pastry shop and began experimenting with new recipes, including that of cantucci. These biscuits, made from flour, eggs, sugar, almonds and pine nuts, were baked twice to make them crispy and long-lasting, ideal for storage during long sea voyages. Antonio Mattei's biscuit factory soon became famous regionally and nationally, so much so that in 1895 it was chosen to represent Tuscany at the International Exhibition in Bordeaux. Aceto in Italy is (not) only made in Modena. The Natali family wanted to dispel this myth by starting to produce quality vinegar in Tuscany. With the arrival of the new generation in the company and the idea of exploiting the knowledge of natural fermentations that had always been used at home for wine, the production turned to vinegar. A winning intuition that in just a few years has led this company to become the most important in the region, with the Acetoscana brand. Sangiovese grapes are harvested in the Chianti hills. Vinification and fermentation, which are essential to obtain a quality vinegar, are constantly controlled and managed in a natural way. The key part of the process is a slow acetic fermentation at a constant temperature that requires long periods of time and continuous controls, carried out using a superficial static method, reminiscent of the ancient Orleans method.
