Castiglione DOC Maremma Toscana Cacciagrande, Vinification:
fermented in stainless steel at controlled temperature for 30 days, malolactic fermentation and maturation take place in 300lt Tonneaux of French Allier oak, medium to long maturation, medium toasting, for 12/14 months. Bottle ageing lasts from 4 to 6 months
C'era e Non C'era Val Del Melo, Tasting notes:
A wine with a rich and harmonious bouquet, it presents fruity notes of red berries enveloped by hints of tobacco and chocolate, the taste is fine with a soft and long lasting finish
The grapes are destemmed and left almost entirely intact. Fermentation takes place at a controlled temperature of 27 degrees and maceration lasts about 25/30 days, followed by melolactic fermentation. Ageing takes place in 10hl French oak barrels for approximately 12 months, after which the wine is blended and bottled.

Save The Grape:
The winery was created through the redevelopment of a beautiful 30-year-old vineyard in Maremma that gave birth to Fihaia Rosso 2021 and 2022. The project was born to create a wine community made according to traditional and simple methods, aimed at freshness and that is great for both ready drinking and bottle aging.
The wines of this reality are united thanks to each other and distinguished by innovative winemaking, whole cluster fermentations and prolonged carbonic macerations, early harvests and lower ph, these methods are implemented mainly to reduce the impact of climate change that increasingly leads to over-ripening of grapes

Acqua Giusta VermentinoTenuta di Badiola, Tasting notes:
This wine has a straw-yellow colour with greenish highlights, the floral bouquet presents not only hints of white flowers but also fruity notes of white pulp fruit, the taste is delicate and fresh, with good acidity and very persistent
The grapes are harvested strictly by hand and transported in small plastic crates. Vinification takes place by pressing the whole grapes at very low pressure in order to avoid the extraction of undesirable substances.

Tenuta di Badiola
Located in the heart of the Maremma, near Castiglione Della Pescaia, is the Tenuta di Badiola. Built in the mid-19th century by the Grand Duke of Tuscany, it boasts one of the highest expressions of the biodiversity of the Mediterranean maquis, comprising more than 500 hectares of land divided between vineyards, olive groves, hillsides and woods.The Acquagiusta vineyards cover 30 hectares of the estate and are divided into two vineyards. They have been positioned by carefully studying the exposure of the plants to the various elements in order to recreate the best conditions for their adaptation and to make the most of each natural element.
The wines from these vineyards are created with the utmost respect for natural processes, so that the grapes are enhanced to the fullest and the characteristics of the terroir are not altered. This process also allows the company to create an authentic and inimitable product.

Castello di Monsanto
There are two places at Castello di Monsanto that capture every visitor for the charm and the magic that is perceived: the Poggio’s hill and the historic cellar. Being able to transmit at least a tenth of the emotions you experience visiting the Monsanto winery is very difficult. The aromas, the echoes, the silences, the layers of noble molds make it a unique place that deserves at least one visit. The company has its origin from here. So from a climb on the Poggio and from a descent into the cellar, the idea of making a Cru in Chianti Classico was born for the first time. It was 1962 when the first 6,000 bottles of the Chianti Classico Riserva Il Poggio were produced. Of the 72 hectares planted with vineyards, between 260 and 310 meters s.l.m., 56 ha are in Sangiovese, the vine in which the company has deeply believed from the beginning. The Sangiovese clones present in the vineyards come from a mass selection of vines found in the vineyard Il Poggio, “the mother” of all the vineyards of Monsanto. In a small percentage are then present the two historical vines of the Chianti Classico vine: Canaiolo and Colorino.

Oatmeal soup Podere Pereto, How to use:
This soup can be cooked without soaking. It consists only of cereals and can be combined with legumes to form a complete single dish.
Recipe for 4 persons: Pour 200 g soup into 2 l cold water accompanied by 2 diced carrots, 1 celery stalk and 1 onion and salt to taste. Bring to the boil and leave on the stove for 35 minutes. Season with slightly warmed EVO oil and freshly chopped rosemary and thyme.

Caseificio Cugusi:
The farm only uses its own milk from pastures extending over 200 hectares in the Val d’Orcia area, the first milking takes place at around 5 a.m. and the pasteurisation process begins at 6 a.m. Production is carried out with the utmost care and attention at every stage, which allows the farm to produce a cheese of unquestionable quality and fine taste. The maturing process takes place on fir wood planks, turning the cheeses daily. The company mainly produces three types of cheese: fresh cheese, which takes no more than 15 days to mature and has a soft texture and a light skin; semi-matured cheese, which matures for 3 months and has either a yellow skin or a red skin (if treated with tomato conserve); and finally, matured cheese, which requires at least 7 months of maturing and is characterised by a dark-coloured skin treated with olive oil grounds, these are only the macro-categories of cheeses produced by these artisans of taste, in fact their products also feature various cheeses fermented according to ancient traditions and other types of cheese that require special processing to guarantee unique tastes

The olive tree is the tree with the fundamental fruit. Their olive oil comes mainly from centenarian trees that are located on the sunny hill. The olive harvest begins in November where it is harvested by hand and the pressing of the olives is carried out cold and on the same day in the company’s oil mill.
