Azienda Agricola Terra di Mezzo:
Azienda Agricola Terra di Mezzo was born in the heart of the Casentino, immersed in the Casentino forests. Thanks to its proximity to the source of the Arno river and the climatic protection offered by the Tuscan Apennines, the company is able to obtain products of excellent quality. The company boasts more than 35,000 hazelnuts that have been enhanced and cared for since the beginning of the activity, thus succeeding in giving new splendour to both the land and an ancient cultivation
Grotta del Fiorini Caseificio Il Fiorino, Tasting notes:
Hints of medium intensity vegetal, musty. Intense flavour and sweetness, long and persistent
Caseificio Il Fiorino
The Caseificio Fiorino dairy is located in a place of extraordinary charm and historical value, the medieval village of Roccalbegna on the slopes of Mount Amiata. The milk used to produce our cheeses comes exclusively from selected local farms in the neighboring municipalities: Roccalbegna, Saturnia, Semproniano, Scansano, Arcidosso, Cinigiano, Campagnatico, and Grosseto. After internal analysis, a selection is made based on the characteristics of the milk and the type of cheese to be made. The aim is to achieve the highest quality regardless of yield. Each processing step is carried out by hand by experienced cheesemakers. In fact, their Pecorino Toscano cheeses are awarded every year in the most important global competitions.

Cocciuto IGT Fontuccia IGT, Tasting notes:
Intense amber, golden reflections. Intense aromas of yellow and white fruit supported by floral notes. Pleasantly emerging is that iodized minerality that recalls the purity of fresh sea air. A barely noticeable tannic texture and great elegance, an unattainable white in terms of energy, complexity and charm.
Cocciuto because this wine is the result of their stubbornness in combining past and future passion and innovation. The Ansonica from our vineyards, burnt by the sun and buffeted by the winds, vinified in amphora with long maceration on the skins – about 6 months – during which the terracotta allows constant micro-oxygenation, preserving the most authentic aromas.

Fontuccia
Fontuccia dedicated everything to the island life and their passion is infinite, which viticulture today calls “heroic”. An archaic knowledge that they have chosen to protect, enhancing specificities and the beauty of their territory with this wine. They are one of the very few winegrowers on the island of Giglio. Heroic viticulture because their vineyards are small terraces on granite rocks overlooking the sea. The harvest is done by hand, as it was 80 years ago because even the use of tractors is impossible.

How to use Aceto Rosso:
Perfect to match vegetables and legumes. This Aceto is made of the best Chianti Grapes.
Aceto from Arezzo
Aceto in Italy is (not) only made in Modena. The Natali family wanted to dispel this myth by starting to produce quality vinegar in Tuscany. With the arrival of the new generation in the company and the idea of exploiting the knowledge of natural fermentations that had always been used at home for wine, the production turned to vinegar. A winning intuition that in just a few years has led this company to become the most important in the region, with the Acetoscana brand. Sangiovese grapes are harvested in the Chianti hills. Vinification and fermentation, which are essential to obtain a quality vinegar, are constantly controlled and managed in a natural way. The key part of the process is a slow acetic fermentation at a constant temperature that requires long periods of time and continuous controls, carried out using a superficial static method, reminiscent of the ancient Orleans method.

Thanks to the work of Priscilla Occhipinti, the only woman master distiller in the world, Nannoni Grappe has established itself over the years as the best producer of distilled spirits in the world, in fact, Nannoni Grappe has won numerous awards, 144 gold medals in 9 years, we can say that it is the most awarded producer.

Podere Montale
Podere Montale, was founded in July 2014 but found its true beginning with the first harvest of the 2015 vintage. The story is all to be written. The will and the road taken in these years is to create a well-integrated reality on a territorial and social level, which can be a flagship for the entire community and for the name of Montecucco. The marl soil on which the company stands is very suitable for wine production, being located in a place that enjoys the constant ventilation of the sea and the protection of Monte Amiata.
Tasting Notes:
Fresh and fragrant, this extra strawberry jam combines sweetness and liveliness. Excellent for breakfast on bread or croissants, it enriches cakes and tarts, enhances yoghurt and ice cream, transforming every taste into a moment of delicious simplicity and authenticity.
Mieleria Rossi Novaro:
Mieleria Rossi Novaro was founded in the 1960s in Casentino. It was in these mountains that Novaro, the founder, developed a passion for bees and honey production. The settled business soon became nomadic in order to diversify the types of honey produced, searching for the plants and essences loved by bees. The hives were moved partly to Maremma, far from sources of pollution. Thanks to the proximity to the sea and the mild climate, it is possible to produce light-coloured honeys, such as sunflower, clover and sulla. Over the years, Novaro expanded his business and the ever-increasing number of hives convinced him to move permanently to Grosseto, while maintaining a close relationship with his homeland, where he continues to produce forest and chestnut honey. In the workshop at the headquarters, fruit is processed to produce extra jams, compotes to accompany cheese and fruit in syrup, as well as honey-based gastronomic specialities and much more. In keeping with its commitment to the environment, “La Mieleria Rossi Novaro” is self-sufficient in the production of the electricity used in its workshop.

When tasting their rice, you can taste the flavors of the Maremma. Tenuta San Carlo is a unique place, an out-of-the-ordinary farm. Located in the plain of the Ombrone river, inside the Maremma Park, Tenuta San Carlo is immersed in one of the most natural and unspoiled landscapes of Tuscany. To produce top-quality rice, they listen to the land and respect nature, without wanting to dominate it. From the preparation of the soil, to the selection of the seed up to the timing of the harvest, they follow an ethics of sustainability and pay close attention to details in every phase of the process. “From our land to your table” is the slogan of Tenuta San Carlo, speaking of its rice. All rice is naturally grown and worked in stone to ensure maximum quality. In October 2015, Tenuta San Carlo embarked on the multi-year transition path to certified organic production. In fact, very strict ecological standards are followed in the production of rice and no herbicides, pesticides or fungicides are used. Instead, they prefer to start preparing the soil several months before sowing to naturally avoid the growth of weeds and other potential unexpected events that would hinder a healthy harvest. To improve the quality and fertility of the soil, they use techniques such as plant cover and crop rotation. Only two types of rice are produced: Carnaroli Rice and Ribe.

It exudes a fresh, herbaceous and powerful aroma with dominant notes of artichoke, thistle and unripe almond, enhanced by floral and black cherry nuances which create a bouquet of extreme complexity. The taste is powerful and the bitterness and pungency are in excellent harmony
Villa Magra Grand Cru Frantoio Franci
Serving suggestions: Excellent raw to contrast the sweetness of potatoes, beans, chickpeas and vegetable soups in general; on red meat or very tasty fish; with fresh cheeses such as raveggiolo or mozzarella which enhance the fresh-vegetal component of the oil, excellent on ricotta and spinach tortelli, rice or pasta with Parmesan flakes and grilled porcini mushrooms
Frantoio Franci
The production of Frantoio Franci extra virgin olive oil began almost 70 years ago on the hill of Montenero d’Orcia in Tuscany, on the slopes of Mount Amiata. All Frantoio Franci labels follow a well-defined quality standard in terms of organoleptic characteristics and chemical parameters, which guarantee the consumer continuity of quality from year to year: oils that do not meet the targets are downgraded. For this reason, every year their extra virgin olive oils are among the most awarded in the world.
