Nestled among ancient olive trees on the rolling slopes of Mount Pratomagno, Le Fontacce is far more than a farm. It is a place where history resonates from the walls of an eighteenth-century farmhouse, reborn in 2008 with a mission to protect the authentic soul of Tuscan agriculture. Today, the estate is fully certified organic, standing as a testament to the biodiversity of our region. Here, between the earth and the sky, every product tells a story of deep respect for nature and an unwavering devotion to our rural roots.
The FZolfino Bean, A Masterpiece of Biodiversity
The crown jewel of our production is the legendary Zolfino bean, a culinary treasure we have helped rescue from the brink of extinction. Named for its pale yellow color reminiscent of sulfur and prized for its small, round shape, this bean is famous for a creaminess and richness of flavor that has no equal. Its cultivation is a sacred ritual that follows the traditional agricultural calendar, with sowing traditionally beginning on the hundredth day of the year. Because it is highly sensitive to climatic conditions, its harvest is often limited, which once led farmers to abandon it for more reliable crops. Today, thanks to our commitment and the protection of a dedicated producers association, the Zolfino is back on the table as an official Slow Food Presidium.

Le Fontacce
The farm " Le fontacce" was born in 2008, on a farm existing since the beginning of 1800, is certified organic on all its products. Le Fontacce is a producer of the famous Fagiolo Zolfino Slow Food which is so called for its pale yellow color like sulfur, has a round shape and its pasta is creamy and exceptionally tasty. Traditionally it is sown on the hundredth day of the year, also called by farmers “day of the hundred”. It is very connected to climatic conditions and often produces a very small harvest, so much that its cultivation was almost abandoned, in preference to beans having a more reliable yield.
