The Tuscan Riviera, where the Alps meet the Mediterranean. Famous for its tourist beaches, summer nightlife, and Carrara marble, it is also home to some excellent products, created thanks to the particular conformation of unique and iconic places. In the millenary marble basins of Carrara, precisely in the village of the colonnade, the best lard in Italy, lardo di colonnade, is created.
Among the hills caressed by sea breezes and protected by the Apuan Alps are centuries-old olive trees, recognized as a slow food presidium. This is Versilia, discover our selection.

Cream of Lardo di Colonnata IGP Larderia mafalda, Taste notes :
As white as the marble that cradles its seasoning, fragrant with spices, delicate and sweet to the palate. In the past, it was prepared by beating the lard in the white marble mortar of the Canaloni di Colonnata, and used as a basic condiment.

The history of Larderia Mafalda:
“Larderia Mafalda” is the oldest larder in Colonnata, already existing in 1930, when “lard” was just a poor man’s dish. The quality of Lardo di Colonnata IGP Mafalda derives from the excellent raw materials and the coexistence of artisan care with the safety standards of the most modern companies. The pork lard matured in this village has organoleptic characteristics that are different from all others. In addition, skillful flavoring allows the lard to soften and take on particularly intense and pleasant aromas and scents.
The history of La Bottega di Adò:
La Bottega di Adò was founded in 1992. It is a state-of-the-art workshop specially built in Montignoso in the heart of the Apuan Alps. It is perfectly equipped in terms of technology and structure and ensures production at a national level in accordance with current EEC standards. But while the mind is modern and rational, the heart remains that of the great-grandfather, and the aromatics are still crushed in a marble mortar to capture the true flavors of the past. The spices are carefully selected from the best importers and ground on the spot to preserve their full aroma.

Lardo di Colonnata is white, almost pinkish: sometimes you may be lucky enough to find the so-called ‘stripe’ of a deep pink color, which adds to its visual beauty and enhances its taste. The upper part is covered with a good thickness of sea salt, grey-black in appearance due to the spices with which it is soaked

The cream is obtained by processing our lard with black summer truffle (Tuber aestivum) harvested along the hills from San Miniato to Volterra in the heart of Tuscany. When tasting it, you will be amazed to discover a pleasant perception of absolutely excellent flavour. Upon olfactory analysis, one immediately perceives the delicate flavour of the black summer truffle and fully memorises its aroma.

All the Village’s production activities exploit alternative energy thanks to the 100 kW photovoltaic system.

Il Quercetano
The farm Il Quercetano was founded in 2020 with the idea of safeguarding the olive biodiversity of the production area and with the aim of producing a superior quality extra virgin olive oil rich in flavors and fragrances. The company’s logic is based on the recovery of the Quercetano olive groves, which are now abandoned, restoring value to the landscape. Their oil is produced in the hinterland of Versilia, an ancient landscape protected by the Apuan Alps and caressed by the tramontana wind and sea breezes. The Olivo Quercetano cultivar is a strong and vigorous native variety.
