Bolgheri Rosso Pievi Fabio Motta:
Harvesting takes place when the grapes are fully ripe, fermentation is carried out exclusively with natural yeasts in cement tanks, the cap is submerged manually for the duration of fermentation, which lasts approximately 2 weeks for each variety. After racking and spontaneous malolactic fermentation, the wines are normally blended before the end of the year, after which they are aged for a year in unglazed cement vats. After the appropriate filtrations, it is bottled and rests for at least 6 months in the bottle

Fabio Motta’s company started out with a small plot of land comprising 4 hectares of vines about 20 years old and then grew to about 7 hectares.
