Durum wheat Triticum Turanicum is an ancient grain originating in the regions of ancient Mesopotamia. Considered the ancestor of today’s durum wheat, it is one of the oldest grains cultivated by man. The monks of the Monastery of Siloe are recovering this ancient wheat variety by cultivating it on their land. Triticum Turanicum is a mineral-rich, high-protein wheat that has not been altered by the genetic manipulation techniques of modern agriculture.
