Soils characterised by sandy soil rich in skeleton were chosen to cultivate vines that express concentration and power, such as Cabernet Sauvignon and, in particular, Cabernet Franc. On the other hand, the clayey, mineral-rich soils are used to grow vines such as Merlot, in which elegance, fragrance and harmony are sought after. The vineyard at Via Bolgherese is lightly tilled in order to keep the soil fresh and aerated, while at Le Sondraie temporary grassing (during the winter-spring months) with grasses is used to limit vigour and optimise the relationship between temperature and humidity.
