It is ideally matched with the great traditional Tuscan reds, even aged ones. A cheese suitable for the preparation of excellent dishes and interesting combinations such as with mushrooms and fish.

The most characteristic cheese of the company’s production, included in the European register of protected geographical indications (DOP) since February 2015. Intense flavor, with a vegetable aftertaste due to the particularity of the rennet (wild artichoke). Strong herring smell as the cheese matures. Aroma: Persistent reminiscent of milk and wild thistle, with hints of herbs and flowers. Taste: Sweet and savory at first taste. Slightly piquant finish, a characteristic that intensifies as the maturing period increases. There is a slight ‘allappatura’ in the more mature types. Long and persistent with fresh vegetable hints. It is a complex and extremely elegant cheese. he ‘Pecorino delle Balze Volterrane’ is a historical cheese of the area, in fact there is evidence of its existence as far back as 1400. The milk destined for processing into ‘Pecorino delle Balze Volterrane DOP’ must be strictly whole sheep’s milk and must not undergo any kind of thermisation; it must be processed within 48 hours from the first milking. The raw milk is poured into a copper or stainless steel boiler until a temperature of 30° to 40°C is reached. Wild thistle vegetable rennet is added to the heated milk, and certain types of starter cultures (obtained from the whey of the previous processing) can be added. The milk is left to coagulate for between 30 and 60 minutes. When the curd has reached the right consistency, it is broken up with the ‘spino’ until the caseous lumps have reached the size of a hazelnut for ‘fresh’, ‘semi-mature’ and ‘mature’ cheese. It is salted by hand and dry salting, after a period of 1-10 days, depending on the size, the excess salt is removed from the surface of the cheese by washing the wheels with water.

Our priority is to pack and ship the products as safely as possible. Wine and oil bottles are shipped with special cardboard protections, there will be no breakages.

All cold cuts and cheeses are vacuum sealed. In summer we also use dry ice and coolers to keep products fresh and their quality intact.
