Antonio Camillo:
Antonio Camillo’s wine cellar is located not far from Capalbio with vineyards extending over about nine hectares. They are mainly composed of old vines, between 40 and 50 years old. The varieties cultivated are obviously Ciliegiolo, with a small percentage destined for Vermentino and Sangiovese. Traditional working methods are followed between the rows, favouring manual operations and limiting interventions for health defence, using exclusively natural products such as copper and sulphur. Even in the cellar, the working method is oriented towards accompanying the wine in its natural course, trying to intervene as little as possible, without forcing the result of the harvest in any way. The wines that are signed each year by Antonio Camillo are recognisable by their elegant style, in which the balance of aromas and flavours is the ultimate goal.

Staccione Tenuta Montauto Vinification:
Before pressing, the grapes are placed overnight in the refrigerator in order to have a greater extraction of aromas and to avoid oxidation, after which the grapes are softly crushed and destemmed, the juice is briefly macerated with the skins, followed by fermentation for 14 days at a temperature of 12°C, and finally stabilised by chilling. Vegan wine. All energy used during the production process comes from renewable sources.
Tenuta Montauto
At the Tenuta Montauto they are definitely lucky. There is nothing around them: only the silence as far as the eye can see of the thick Maremma woods, the wind, the hares and the hawks. There are no factories, no towns, no neighbours, no roads except the provincial road to Campigliola. An isolation that allows them to make uncompromising choices, in total freedom and with an absoluteness that comes from being released from the world. Besides isolation, they also have the good fortune of the providential sea air that always blows in from the west. The Caseificio Fiorino dairy is located in a place of extraordinary charm and historical value, the medieval village of Roccalbegna on the slopes of Mount Amiata. The milk used to produce our cheeses comes exclusively from selected local farms in the neighboring municipalities: Roccalbegna, Saturnia, Semproniano, Scansano, Arcidosso, Cinigiano, Campagnatico, and Grosseto. After internal analysis, a selection is made based on the characteristics of the milk and the type of cheese to be made. The aim is to achieve the highest quality regardless of yield. Each processing step is carried out by hand by experienced cheesemakers. In fact, their Pecorino Toscano cheeses are awarded every year in the most important global competitions.

It is a compact cheese, ideal as an accompaniment to chopping boards or for melting. It has a pleasantly tangy taste and is characterised by its softness: it is so creamy that it melts in the mouth!

Biologica Rustici
The Rustici farm was established in the late 1950s from the 10 hectares of grandfather Giuseppe’s farm located in the Maremma region of Grosseto. At the end of the 1970s, the first selected Friesian dairy mares were introduced, from the best Italian breeding farms, which have always been cared for using innovative breeding techniques that respect the animals’ wellbeing and diet, thus beginning the production of alimentary milk. In 1996, the farm began the direct sale of beef. In the early 2000s, Giuseppe and Andrea took over the business from their father, adding a further 32 hectares of land. From this date, the company embarked on a path of organic farming, taking advantage of BIOAGRICERT certification. At the same time, the vineyard and olive grove are planted, followed by the transformation of milk into dairy products.
