Hystory of Pasta Morelli:
Antico Pastificio Morelli 1860 has been making pasta in Tuscany for five generations, using artisanal techniques, they produce both classic and very special dry pastas with unique taste and characteristics. During the processing of some of their products, they insert the famous wheat germ into the pasta, in fact, during cooking the pasta releases an intense aroma of wheat.
Campo all'Albero IGT La Sala, Tasting notes:
A wine of an intense ruby colour, almost garnet, the nose presents itself with fine notes of ripe, almost cooked fruit, such as plums, sour cherries, blueberries and blackberries. Intense bouquet of spices, black pepper, incense, leather and nutmeg that envelop the palate thanks to a mature, soft and full-bodied tannin.
An important wine, 50% Merlot and 50% Cabernet Sauvignon with international roots but a chianti soul. Vinification takes place after hand picking by sub-zones of the vineyard. Maceration for at least three weeks at a controlled temperature below 30°C Maturation in the cellar for 24 months in fine-grained, low-toasted French barriques of first and second passage, followed by 12 months in the bottle.

Straw yellow color. On the nose it is complex and aromatic with a citrus and floral note in the foreground. On the palate it is sapid, thick and deep. It stands out for its elegant and rigorous bearing.
White wine from San gimignano, the Vernaccia grape is the most important DOCG of a Tuscan white wine.
A great white wine, from a single vineyard where the characteristics of the local grape par excellence, Vernaccia, emerge clearly and distinctly. Although pleasant when young, it often surprises for its ability to age, evolving notes, both olfactory and tasting, complex and mineral. It is not by chance that it is one of the very few white wines produced also in the reserved type. This Vernaccia di San Gimignano wine enhances many gastronomic combinations. Find its natural place in the Mediterranean cuisine in which extra virgin olive oil dominates. Excellent with pasta dishes with white sauces, rice salads, and pasta salads. Surprising is with the ribollita and all its variants that are found in Tuscany. Extraordinary with fish dishes prepared in any way: baked, fried, grilled or baked, as well as raw fish. Hystory of Pasta Fabbri:
Since 1893 in Strada in Chianti, from father to son, the Fabbri family has been making pasta in the same way, without any changes, in the same square in the center of the village. At Pasta Fabbri, they still respect traditional pasta-making techniques: drying is ‘very slow’ (from 72 to 144 hours depending on the format), temperatures are strictly below 38°C and the pasta is drawn ‘al bronzo’, i.e. with the help of original bronze dies from the 1950s.

There are two places at Castello di Monsanto that capture every visitor for the charm and the magic that is perceived: the Poggio’s hill and the historic cellar. Being able to transmit at least a tenth of the emotions you experience visiting the Monsanto winery is very difficult. The aromas, the echoes, the silences, the layers of noble molds make it a unique place that deserves at least one visit. The company has its origin from here. So from a climb on the Poggio and from a descent into the cellar, the idea of making a Cru in Chianti Classico was born for the first time. It was 1962 when the first 6,000 bottles of the Chianti Classico Riserva Il Poggio were produced. Of the 72 hectares planted with vineyards, between 260 and 310 meters s.l.m., 56 ha are in Sangiovese, the vine in which the company has deeply believed from the beginning. The Sangiovese clones present in the vineyards come from a mass selection of vines found in the vineyard Il Poggio, “the mother” of all the vineyards of Monsanto. In a small percentage are then present the two historical vines of the Chianti Classico vine: Canaiolo and Colorino.
It has an intense ruby red colour and an elegant, persistent bouquet; in the mouth it is dry and balanced with plenty of body. The Riserva offers real concentration and depth of character.
The grapes are destemmed and fermented all together. Fermentation of the must takes place in cement vats for 2-3 weeks. The must is then transferred to steel vats to complete malolactic fermentation. After a couple of months, when the must has been clarified and decanted, half is transferred to steel vats, while the other half matures for 12 months in second-passage oak barrels.

Wine of a brilliant ruby colour, rich bouquet on the nose of ripe black cherry, undergrowth, plums and blackberry jam. Intense and soft at the same time, thanks to ripe tannins that delicately envelop the palate. A wine that enhances the characteristics of Sangiovese, with great structure and ease of drinking. Long, savoury and spicy finish.
Chianti Classico Gran Selezione La Sala is a wine that is perfect in combination with red game meat. 100% Sangiovese selected and harvested by hand from a single vineyard of 1.5 hectares. Vinification begins with the use of indigenous yeasts for fermentation, which lasts about two weeks. Maceration for three weeks at controlled temperatures not exceeding 25°C. After that a long aging of 36 months in a single 38hl un-toasted French oak barrel. Bottle aging Minimum 6 months.

Wine created from a selection of grapes from the vineyards of Il Torriano (300 metres above sea level), in Montefiridolfi. In these hills, which have always been ideal for growing our best Sangiovese, Patrizia Cateni planted her first vineyard using modern methods. The soil is rich in red clay and sedimentary rocks of alberese and galestro, with a mainly south-west exposure. The wine is aged in large French oak barrels of 39bl.

Renzo Marinai's estate is named after the nearby ancient church of San Martino. Renzo Marinai himself took over the estate in 1996 and, with the support of oenologist Giovanni Cappelli, completely reorganised its operations, converting it into an entirely organic farm. The estate covers about 33 hectares; just over eight are planted with vines. The terrain is undulating, rising and falling between 350 and 500 metres above sea level. The soil is marly, perfect for Sangiovese, allowing good drainage and the development of deep roots.

Very compact, with notes of vanilla and chocolate, with sweet and soft tannins and a persistent acidity typical of the Sangiovese variety| good is the persistence on the palate and the complexity of the aftertaste.

Castellare di Castellina was born from the union of four farms. Those were the 70’s when the so-called Renaissance of the Italian wine had begun. Intense and lively ruby. Enveloping and alive on the nose, slightly balsamic, with notes of vanilla, cassis, tobacco, mint and black cherry. Taste composed and taut, dense tannins very well integrated. Final of excellent length.
The Chianti Classico DOCG Riserva Castello di Monsanto 90% Sangiovese and 10% of Canaiolo & Colorino is the result of vinification in temperature-controlled truncated conical steel vats with a system of draining and pumping over for about 18/20 days. The wine is then refined partly in 38 HL oak casks and partly in second passage tonneaux for about 18 months. Finally, it rests in the bottle for about 6 months.

There are two places at Castello di Monsanto that capture every visitor for the charm and the magic that is perceived: the Poggio’s hill and the historic cellar. Being able to transmit at least a tenth of the emotions you experience visiting the Monsanto winery is very difficult. The aromas, the echoes, the silences, the layers of noble molds make it a unique place that deserves at least one visit. The company has its origin from here. So from a climb on the Poggio and from a descent into the cellar, the idea of making a Cru in Chianti Classico was born for the first time. It was 1962 when the first 6,000 bottles of the Chianti Classico Riserva Il Poggio were produced. Of the 72 hectares planted with vineyards, between 260 and 310 meters s.l.m., 56 ha are in Sangiovese, the vine in which the company has deeply believed from the beginning. The Sangiovese clones present in the vineyards come from a mass selection of vines found in the vineyard Il Poggio, “the mother” of all the vineyards of Monsanto. In a small percentage are then present the two historical vines of the Chianti Classico vine: Canaiolo and Colorino.
Chianti Classico DOCG Riserva Il Poggiale Castellare di Castellina, Tasting notes:
Vibrant and lively ruby colour. The nose displays typical violet flowers and cherry fruit scents and a mineral note. Opens immediately to the palate with freshness and flavour dominating the middle part of the tasting, while the pleasant finish offers fragrant fruity notes.
Chianti Classico DOCG Riserva Il Poggiale reserve obtained from a single vineyard and which received the highest scores for its elegance and typical characteristics. A wine that showcases the enormous potential of the Sangioveto grape.

The Renzo Marinai Chianti Classico is a very well-balanced expression of Sangiovese showing a large component of ripe fruit balanced by structure and freshness. Renzo Marinai's estate is named after the nearby ancient church of San Martino. Renzo Marinai himself took over the estate in 1996 and, with the support of oenologist Giovanni Cappelli, completely reorganised its operations, converting it into an entirely organic farm. The estate covers about 33 hectares; just over eight are planted with vines. The terrain is undulating, rising and falling between 350 and 500 metres above sea level. The soil is marly, perfect for Sangiovese, allowing good drainage and the development of deep roots.
Cinta Senese DOP LArd Renieri:
Richer in oleic acid, lard from 'Cinta Senese DOP' has a very soft consistency and is very pleasant to the palate.
It is kept under salt in steel basins for more than 6 months with the addition of garlic, pepper and herbs.

Sbriciolona is the most characteristic of Tuscan cured meats. It is obtained by finely mincing choice cuts of Cinta Senese meat and adding wild fennel seeds to the mixture.
The consistency is very soft and the slice tends to 'crumble'. The aroma and taste are unmistakable. Free of any allergens, it is stuffed into natural gut.
