Artisanal Production:
Bottarga di muggine is obtained from the eggs of mullet. Once dried and cured, it has a golden or amber colour and a savoury, salty flavour with a hint of almond. Bottarga was once known as the 'poor man's caviar', but this does not do justice to this Mediterranean delicacy, prized by food lovers from the ancient Egyptian, Phoenician and Roman empires to the present day.

I Pescatori di Orbetello have succeeded in integrating fishing and farming, the sale of fresh produce, and the preparation of processed products, tourism, and catering. All the fish comes exclusively from the Orbetello lagoon, where careful integrated management between fishing and the environment guarantees the freshness of the product. Ancient fishing techniques, the result of centuries of experience and climatic conditions, sometimes cannot guarantee the immediate availability of the product, which will be delivered anyway. Slow Food has recognized the work of I Pescatori as a model to follow and has designated the Bottarga di Orbetello and Palamita del Mare Toscano as its Presidia.

The history of Le Selle di Vallolmo:
The Selve di Vallolmo forests are located in Casentino, a valley surrounded by centuries-old Apennine forests. In this area, still little known to tourists, it has been possible to maintain and preserve the ancient crafts related to agriculture, livestock breeding and cooking, rich in local products. Today, Le Selve di Vallolmo carry on their activity in a sustainable manner and contribute to keeping the traditions of Casentino alive. The company also breeds and processes the famous Grigio del Casentino, a pig native to the area, from which the delicious Prosciutto del Casentino, a Slow Food presidium, is made.

Sergio Falaschi
Sergio Falaschi is a piece of history in the small village of San Miniato. Butchers since 1925, the Falaschi family contributed to the pork butchering tradition of Tuscany and are still today ambassadors and guardians of ancient Tuscan traditions. They are famous for processing games and producing excellent cured meats, including the Finocchiona IGP. Their pride and joy, however, is the Mallegato di Pisa, a product so exceptional and unique that it is among the region’s slow food presidia.

The history of Renieri:
The Renieri family has always tried to tell the story of Tuscan traditions and the culture of good eating in the products they make. It is in this land that one of the oldest Tuscan pig breeds, the Cinta Senese, was born. So they have chosen to safeguard and enhance this breed by dedicating attention to the territory, breeding and production. They have been producing 'Cinta Senese PDO' Prosciutto and typical Tuscan Salumi since 1964, following a family tradition.
They do this by remaining 'artisans', with passion, according to the teachings handed down from father to son, choosing the best raw materials, personally taking care of all production phases, to achieve the quality that distinguishes our products.

Scovaventi
Podere Scovaventi was founded by Luca De Filippo and Carolina Rosi, who used to come here to retreat and regenerate in the breaks between theatre tours.
Having fallen in love with the countryside, expert gourmets, Carolina and Luca slowly began to restore the farmhouse, improve the soil and prepare preserves with the many products the garden offered them.
In 2015, they acquire olive groves in the vicinity of the company with other native varieties, thus taking production from family consumption to external distribution. In the same 2015, however, Luca passed away and Carolina decided to pursue this dream alone.
The company creates many varieties of products in its territory, pickles, jams, honeys and many others; the quality of these products comes from tradition and love for the land and its fruits.
