Cruditeè of artichokes Scovaventi:
Prepared using only artichokes of the Violetto di Toscana variety. The artichokes are harvested when they are still very small and fresh during the coolest hours of the day, to guarantee maximum quality. They are then finely chopped and left raw to preserve their intense flavour, then dipped in lemon juice and organic extra virgin olive oil.

Nobile di Montepulciano DOCG Riserva Bossona Cantine Dei, Tasting notes:
Complex, elegant and balanced structure. Ruby-coloured tending to garnet, with intense and elegant aromas, with hints of violets, underbrush and spices, it has a character of finesse, with firm, velvety tannins and a long, deep finish.
Vino Nobile Riserva Bossona is one of the highest expressions of the Montepulciano DOCG. Its grapes come from the vineyard of the same name, one of the most suitable, planted by Caterina’s grandfather, Alibrando, in 1961. The wine became a Riserva in 1999, with long ageing in wood and in the bottle. Without a doubt it is one of the estate’s flagship wines, a symbol of the elegance and grace of Sangiovese in Montepulciano. The yields are very low (about 40 quintals per hectare) and the wine is bottled with the label Bossona Riserva only in the best vintages. The soil is of Pliocene origin, dating back 2.5-5 million years. It is rich in tuff, skeleton and fossils, which are not only strongly draining, but also give the wine structure and minerality. The Bossona vineyard is one of the sunniest areas of Montepulciano and its favourable exposure allows for excellent ripening of the grapes. The complex composition of the soil is perfect for Sangiovese, and the constant ventilation ensures that the grapes are healthy.

Nobile di Montepulciano
Vino Nobile di Montepulciano Cantine Dei is one of the most prestigious Italian wines, the first to be awarded the DOCG and it is the perfect example of the expression that Sangiovese takes in the Montepulciano lands. It is mostly Sangiovese, with small quantities of complementary varieties (5%). Grows in a predominantly clayey soil with the presence of sand (tuff), which gives it an intense colour, a full body and the ability to age. The vinification technique consists of soft pressing, fermentation in stainless steel at a controlled temperature of 26-28°C and maceration on the skins for 15-20 days with pumping over. Finally, it is aged for a minimum of 24 months, of which at least 18 months in 50 hl Slavonian oak casks.
Barco Reale di Carmignano Capezzana , Tasting notes:
Elegant, with notes of black cherry and raspberry well blended with the ripe fruit. ripe fruit. In the mouth it is soft, enveloping, with soft tannins and good body. The acidity is present, but well balanced by the tannic richness. The finish is long, with an aftertaste that tends towards sweet liquorice.
A very small and perhaps little-known DOC, but with wines of great quality. On the outskirts of Florence, wine has always been produced at Tenuta Capezzana.

White wine from San gimignano, the Vernaccia grape is the most important DOCG of a Tuscan white wine.
A great white wine, from a single vineyard where the characteristics of the local grape par excellence, Vernaccia, emerge clearly and distinctly. Although pleasant when young, it often surprises for its ability to age, evolving notes, both olfactory and tasting, complex and mineral. Chianti Classico Castello di Monsanto is certainly among the best Chianti wines to be found. Produced from the estate's youngest vineyards, the Chianti Classico Annata combines the readiness and lightheartedness of the sip with the depth that Monsanto's soils give its wines.

There are two places at Castello di Monsanto that capture every visitor for the charm and the magic that is perceived: the Poggio’s hill and the historic cellar. Being able to transmit at least a tenth of the emotions you experience visiting the Monsanto winery is very difficult. The aromas, the echoes, the silences, the layers of noble molds make it a unique place that deserves at least one visit. The company has its origin from here. So from a climb on the Poggio and from a descent into the cellar, the idea of making a Cru in Chianti Classico was born for the first time. It was 1962 when the first 6,000 bottles of the Chianti Classico Riserva Il Poggio were produced. Of the 72 hectares planted with vineyards, between 260 and 310 meters s.l.m., 56 ha are in Sangiovese, the vine in which the company has deeply believed from the beginning. The Sangiovese clones present in the vineyards come from a mass selection of vines found in the vineyard Il Poggio, “the mother” of all the vineyards of Monsanto. In a small percentage are then present the two historical vines of the Chianti Classico vine: Canaiolo and Colorino.

Fresh and Brut Spumante. Produced with a blend of Vermentino and Chardonnay in equal measure, this sparkling wine interprets in Maremma style a product out of the tradition of southern Tuscany. Charmat Method. Slow fermentation, with a long stay on the lees, refined for six months in the bottle. Refined bubbles for a delicious aperitif.
Is Produced with a blend of Vermentino and Chardonnay in equal measure, this Charmat method sparkling wine interprets in Maremmano style a product out of the tradition of southern Tuscany. “Labor Omnia Vincit”, as never before, this motto reconfirms its validity in the tenacity and the attachment of the Mantellassi Farm, in Magliano in Toscana. Mantellassi have always been winemakers, in 1960 began the planting of the first four hectares of vineyards in Banditaccia, up to the current one hundred. These extend on some of the many hills of the Fattoria, in terrains of tufaceous-calcareous nature with an ampelographic base consisting mainly of the Sangiovese grape, then of the Alicante, Cabernet Sauvignon, Morellino, Merlot, Canaiolo Nero, Black Malvasia, Ciliegiolo, Vermentino Bianco vines. , White Sauvignon. When tasting their rice, you can taste the flavors of the Maremma. Tenuta San Carlo is a unique place, an out-of-the-ordinary farm. Located in the plain of the Ombrone river, inside the Maremma Park, Tenuta San Carlo is immersed in one of the most natural and unspoiled landscapes of Tuscany. To produce top-quality rice, they listen to the land and respect nature, without wanting to dominate it. From the preparation of the soil, to the selection of the seed up to the timing of the harvest, they follow an ethics of sustainability and pay close attention to details in every phase of the process. “From our land to your table” is the slogan of Tenuta San Carlo, speaking of its rice. All rice is naturally grown and worked in stone to ensure maximum quality. In October 2015, Tenuta San Carlo embarked on the multi-year transition path to certified organic production. In fact, very strict ecological standards are followed in the production of rice and no herbicides, pesticides or fungicides are used. Instead, they prefer to start preparing the soil several months before sowing to naturally avoid the growth of weeds and other potential unexpected events that would hinder a healthy harvest. To improve the quality and fertility of the soil, they use techniques such as plant cover and crop rotation. Only two types of rice are produced: Carnaroli Rice and Ribe.
