Castello di Monsanto
There are two places at Castello di Monsanto that capture every visitor for the charm and the magic that is perceived: the Poggio’s hill and the historic cellar. Being able to transmit at least a tenth of the emotions you experience visiting the Monsanto winery is very difficult. The aromas, the echoes, the silences, the layers of noble molds make it a unique place that deserves at least one visit. The company has its origin from here. So from a climb on the Poggio and from a descent into the cellar, the idea of making a Cru in Chianti Classico was born for the first time. It was 1962 when the first 6,000 bottles of the Chianti Classico Riserva Il Poggio were produced. Of the 72 hectares planted with vineyards, between 260 and 310 meters s.l.m., 56 ha are in Sangiovese, the vine in which the company has deeply believed from the beginning. The Sangiovese clones present in the vineyards come from a mass selection of vines found in the vineyard Il Poggio, “the mother” of all the vineyards of Monsanto. In a small percentage are then present the two historical vines of the Chianti Classico vine: Canaiolo and Colorino.

Save The Grape:
The winery was created through the redevelopment of a beautiful 30-year-old vineyard in Maremma that gave birth to Fihaia Rosso 2021 and 2022. The project was born to create a wine community made according to traditional and simple methods, aimed at freshness and that is great for both ready drinking and bottle aging.
The wines of this reality are united thanks to each other and distinguished by innovative winemaking, whole cluster fermentations and prolonged carbonic macerations, early harvests and lower ph, these methods are implemented mainly to reduce the impact of climate change that increasingly leads to over-ripening of grapes
Finocchiona IGP Falorni: The King of Tuscan Cured Meats
The Finocchiona IGP Falorni is more than just a salami, it is a journey into the heart of Tuscan culinary tradition. Aged for at least 7 to 8 weeks to reach its peak flavor, this traditional fennel salami offers a texture that is truly unique and a refreshing, aromatic profile thanks to the hand-selected fennel seeds. It is a product that speaks of history, patience, and uncompromising quality.
Serving Suggestions and Pairings
To enjoy the Finocchiona IGP at its best, we recommend serving it in thin slices alongside a glass of robust Chianti Red wine. The wine’s structure perfectly balances the aromatic fennel notes of the meat. For a complete Tuscan appetizer experience, pair it with:
-
Tuscan Pecorino Cheese: Both semi-stagionato (semi-matured) and stagionato (aged) varieties provide the perfect contrast to the richness of the salami.
-
Vegetables in Oil: Enhance the flavor profile with artisan-made pickled or preserved vegetables.
Antica Macelleria Falorni: Two Centuries of Excellence
The story of the Falorni family began in 1806 in the historic center of Greve in Chianti. For over two centuries, through nine generations of master butchers, the family has handed down the secrets of ancient recipes and artisanal knowledge. Today, the company still resides in the heart of the Chianti Classico region, maintaining the same commitment to excellence that defined its beginnings.
At Antica Macelleria Falorni, high quality is a daily promise and a deep responsibility toward their long history. Their production philosophy is centered on natural, slow-maturing processes. They avoid the use of techniques or enzymes that accelerate transformation, allowing their cured meats to mature according to the natural rhythm of time. This dedication results in cold cuts that are not just high quality, but simply delicious.
