Save The Grape:
The winery was created through the redevelopment of a beautiful 30-year-old vineyard in Maremma that gave birth to Fihaia Rosso 2021 and 2022. The project was born to create a wine community made according to traditional and simple methods, aimed at freshness and that is great for both ready drinking and bottle aging.
The wines of this reality are united thanks to each other and distinguished by innovative winemaking, whole cluster fermentations and prolonged carbonic macerations, early harvests and lower ph, these methods are implemented mainly to reduce the impact of climate change that increasingly leads to over-ripening of grapes
How to use the Finocchiona IGP Falorni:
This traditional fennel salame is aged at least 7-8 weeks.
Its texture is really unique, and the taste is fresh thanks to the fennel seeds.
We suggest to pair the Finocchiona with a good glass of Chianti Red wine and together with Tuscan pecorino cheese, both semistagionato and stagionato, and with vegetables in oil.
The history of Greve in Chianti:
Since 1806. Their history as butchers and master butchers goes back over two centuries. It all began in the heart of Chianti Classico, in Greve in Chianti, where the company still resides. Antica Macelleria Falorni produces high-quality Cured meats and cold cuts, handing down from father to son (for 9 generations) the secrets of ancient recipes and the artisan knowledge of processing, respecting traditional recipes and knowledge. High quality is a daily commitment for Macelleria Falorni, a responsibility towards its history. For this reason, they produce, every day, simply delicious cold cuts. Long and slow-maturing processes allow their cured meats to mature naturally, without the aid of techniques and enzymes that accelerate their transformation.

Hand-Cut Prosciutto Renieri cured ham is a gastronomic jewel, made 100% in accordance with an ancient and traditional processing system, using only top-quality ingredients, salt and spices from the territory. Tasting Notes:
This white blend combines freshness, texture and aromatic expression in a precise and vibrant vinification. Aged half in amphorae and half in stainless steel, it combines the purity of the fruit with remarkable depth of substance. The nose is intense, with aromas of ripe lemon, fresh pear, white flowers and fine herbs. On the palate, it stands out for its balance:
mineral tension, delicate volume, and a salty, persistent finish. The Incrocio Manzoni brings an unexpected, almost chalky signature that supports the frankness of the Sauvignon and the discreet roundness of the Chardonnay. A vibrant, chiselled wine with a strong personality.
La Corneta:
Rooted in Tuscany, in the heart of the prestigious Chianti Colli Aretini terroir, La Corneta bears the mark of time and the seasons. The wines are produced from 8 hectares of organically cultivated vineyards, where historic grape varieties coexist with rarer ones: Sangiovese, Pinot Noir, Syrah, Chardonnay, Sauvignon Blanc and Incrocio Manzoni. This diversity, combined with living soils and controlled yields, provides health and expressive raw materials. The approach is then based on rigorous vinification and careful selection of the containers for ageing: temperature-controlled stainless steel tanks, barriques and tonneaux of different sizes and vintages, terracotta and cocciopesto amphorae are tools that are used with precision. This meticulous, contemporary and demanding method is part of a constant search for balance, structure and natural complexity, without standardising taste.

Tasting Notes:
Made mainly from Sangiovese grapes, this rosé is produced by direct pressing and vinified
and aged entirely in amphorae to preserve the purest expression of the grapes. The colour is pale, with peach-coloured reflections. The nose reveals delicate aromas of redcurrant, white melon, orange peel and dried flowers. On the palate, the texture is soft, almost velvety, supported by a delicate freshness and a fine tannic structure. The amphora gives a crystalline texture and a slightly salty finish, without any heaviness. A rosé with character, dry and precise, designed more for the table than for an aperitif.

This unique wine combines the solar energy of Sangiovese with the refined finesse of Pinot Noir. The blend reveals an unexpected balance: the depth of Tuscany tempered by the delicacy of Burgundy. The colour is bright ruby, slightly translucent. The nose opens with notes of black cherry, ripe strawberry, with subtle hints of undergrowth, blond tobacco and sweet spices. On the palate, the attack is soft, supported by a pleasant acidity. The tannic texture is fine, taut and precise. A wine of character and elegance, to be served slightly chilled.

Le Ginestre IGT Castellare di Castellina, Tasting notes:
Straw yellow color. The nose has delicious aromas of yellow peach and elderberry. You can perceive notes of grape and a finally a touch of vanilla. The palate enters round and shows a balanced structure.
Tangible proof that Tuscany is also a land of white wines, even if for the most part produced using international varieties. A pleasant wine to drink, in which the depth of a Chardonnay and the aroma typical of a Sauvignon Blanc come together in a delicate and equally full-flavoured blend.

Hystory of Pasta Fabbri:
Since 1893 in Strada in Chianti, from father to son, the Fabbri family has been making pasta in the same way, without any changes, in the same square in the center of the village. At Pasta Fabbri, they still respect traditional pasta-making techniques: drying is ‘very slow’ (from 72 to 144 hours depending on the format), temperatures are strictly below 38°C and the pasta is drawn ‘al bronzo’, i.e. with the help of original bronze dies from the 1950s.
