Ornello DOC Rocca di Frassinello , Tasting notes:
The nose has balsamic and roasted coffee notes. In the mouth, notes of underbrush and a very soft and velvety tannin.
Created as a tribute to the 'Butteri' that remains the symbol of the Maremma land, strong and elegant at the same time. Ornello (from the name of the wood), is the long pointed stick with which the cattle still move. It is characterised by a substantial percentage of Syrah grapes that make it very full and rich while maintaining the elegance and freshness typical of Rocca di Frassinello wines.

Rocca di Frassinello
The winery Rocca di Frassinello, is located in the high Maremma, near Gavorrano, and was designed by the famous architect Renzo Piano. The project is super ambitious and sees the collaboration of two world-famous wineries in this project: Castellare di Castellina and Lafite, the famous French chateau. The Maremma, in addition to being excellent for the local and Tuscan Sangiovese, is suitable for international vines such as Merlot and Cabernet.

Antico Frantoio del Parco:
The mill’s extra virgin olive oil production is the result of the perfect combination of nature and technology. The olives are harvested by hand, following ancient traditions, and the olives are carefully selected to ensure maximum quality. The mill uses modern machinery to process the olives, but with the utmost care to protect the environment and natural processes.
The Parco dell’Uccellina oil mill produces an extra virgin olive oil of the highest quality, characterised by an intense, fruity flavour with notes of aromatic herbs and almonds. The oil is much appreciated by restaurateurs in the area, who use it in the preparation of typical Tuscan dishes.

Maremma Vegetale was established in 2014 with the desire to rediscover the flavours and culinary traditions of our territory and with the firm belief that all its products should be the result of the shortest possible supply chain, made up of raw materials cultivated almost exclusively by the company itself, and that processing and storage should take place in the shortest possible time, i.e. within 8 hours of harvesting.

La Selva Organic Farm:
LaSelva entered the world of Italian organic farming in 1980 in southern Tuscany, in Albinia – Orbetello (GR), a place that is still the heart of all its activities today. Today, on over 600 hectares of agricultural land and in compliance with all European Union regulations on organic farming, it grows vegetables, fruit, cereals and grapes for wine production. It also produces its own animal feed, from which it also obtains the fertiliser that nourishes the soil, thus creating a closed-cycle agricultural system.

It has a liquid appearance and a golden colour, with a very delicate yet enveloping aroma and flavour. Wildflower honey is the most common type of honey. Derived from many different species of flowers, it embodies the various healing properties of the different nectars.
Mieleria Rossi Novaro:
Mieleria Rossi Novaro was founded in the 1960s in Casentino. It was in these mountains that Novaro, the founder, developed a passion for bees and honey production. The settled business soon became nomadic in order to diversify the types of honey produced, searching for the plants and essences loved by bees. The hives were moved partly to Maremma, far from sources of pollution. Thanks to the proximity to the sea and the mild climate, it is possible to produce light-coloured honeys, such as sunflower, clover and sulla. Over the years, Novaro expanded his business and the ever-increasing number of hives convinced him to move permanently to Grosseto, while maintaining a close relationship with his homeland, where he continues to produce forest and chestnut honey. In the workshop at the headquarters, fruit is processed to produce extra jams, compotes to accompany cheese and fruit in syrup, as well as honey-based gastronomic specialities and much more. In keeping with its commitment to the environment, “La Mieleria Rossi Novaro” is self-sufficient in the production of the electricity used in its workshop.

Caseificio Maremma:
Located in the centre of the Tuscan coast, in Follonica, the company established its headquarters in the mid-1960s and since then has focused its dairy production on typical cheeses from the Maremma area that are renowned throughout the world. The factory, located in the industrial area of Follonica, covers an area of approximately 4,000 square metres, which houses the production facilities and the preparation of the finished product before sale. Particular attention is paid to the maturing phase, which has made it necessary to create a suitable environment away from the production site, specifically in Castel del Piano, on Mount Amiata, where the cheese matures naturally in the mountains at an altitude of 700 metres above sea level, creating the perfect balance of flavours typical of these cheeses.

Caseificio Il Fiorino
The Caseificio Fiorino dairy is located in a place of extraordinary charm and historical value, the medieval village of Roccalbegna on the slopes of Mount Amiata. The milk used to produce our cheeses comes exclusively from selected local farms in the neighboring municipalities: Roccalbegna, Saturnia, Semproniano, Scansano, Arcidosso, Cinigiano, Campagnatico, and Grosseto. After internal analysis, a selection is made based on the characteristics of the milk and the type of cheese to be made. The aim is to achieve the highest quality regardless of yield. Each processing step is carried out by hand by experienced cheesemakers. In fact, their Pecorino Toscano cheeses are awarded every year in the most important global competitions.

The history of Il Ghiacciale:
The Il Ghiacciale farm is located on the slopes of Mount Amiata, on the hills of the high Tuscan Maremma where its Cinta Senese pigs grow according to ancient and natural rhythms. With more than 35 hectares of oak and pastures, their pigs grow for at least three years free to graze acorns, berries and tubers according to an ancient tradition that goes perfectly with the precepts of organic and ethical treatment of animals, in order to offer a meat with an unique flavor that is transformed by skilled hands that follow ancient peasant recipes without the aid of dyes or preservatives.
Vermentino Toscana IGT Le Lupinaie, Tasting notes:
Fruity and floral notes enriched with a mineral nuance. Fresh, with an excellent structure and fruity scents
After harvesting, a low temperature pressing with an inert atmosphere takes place, the fermentation of the flower must go at a controlled temperature. The maturation takes place in steel tanks for less than three months.

Making wine has always been the dream of Aldo Galimberti owner of Le Lupinaie, who crowned his dream by buying a farmhouse in Tuscany and producing wine in the 25 hectares that surround it. Lupinaie’s vineyards are part of the DOCG Morellino di Scansano and the wines produced like the Vermentino are perfectly embody the peculiarities of the territory and of Sangiovese.

Olio Abbraccio
Olio Abbraccio was born in Seggiano, on the slopes of Monte Amiata, a small medieval village of about 1,000 people, but surrounded by centuries-old olive trees. Seggiano also gives its name to the cultivar, the Olivastra Seggianese, a plant that withstands the low temperatures of Monte Amiata's winters. The antioxidant properties of Abbraccio mean that this oil can be used daily both for cooking and especially for raw seasoning to benefit from all its nutritional properties.
Viogner DOC Maremma Toscana Cacciagrande, Tasting notes:
It has a straw-yellow colour, the bouquet immediately reveals ample notes of tropical fruit such as pineapple and banana, but also hints of peach and apricot, the flavour is fine and elegant, rightly savoury and structured, and fruity notes also stand out here.

Ganzo Rosato Toscana IGT Podere Montale, Tasting notes:
Brilliant colour with an onion veil hue. It has an intense, delicate, complex bouquet; floral, citrus and fresh fruit notes are perceived. The taste is full, enveloping, balanced and persistent.
Obtained from the early harvesting of Sangiovese grapes that are macerated on the skins for 18/24 hours at a controlled temperature. After an initial settling, fermentation begins on the skins for about 15 days at 16/18° C in stainless steel tanks. The wine is bottled after a short ageing period and stored properly at a controlled temperature.

Podere Montale, was founded in July 2014 but found its true beginning with the first harvest of the 2015 vintage. The story is all to be written. The will and the road taken in these years is to create a well-integrated reality on a territorial and social level, which can be a flagship for the entire community and for the name of Montecucco. The marl soil on which the company stands is very suitable for wine production, being located in a place that enjoys the constant ventilation of the sea and the protection of Monte Amiata.

Tenuta San Carlo
When tasting their rice, you can taste the flavors of the Maremma. Tenuta San Carlo is a unique place, an out-of-the-ordinary farm. Located in the plain of the Ombrone river, inside the Maremma Park, Tenuta San Carlo is immersed in one of the most natural and unspoiled landscapes of Tuscany. To produce top-quality rice, they listen to the land and respect nature, without wanting to dominate it. From the preparation of the soil, to the selection of the seed up to the timing of the harvest, they follow an ethics of sustainability and pay close attention to details in every phase of the process. “From our land to your table” is the slogan of Tenuta San Carlo, speaking of its rice. All rice is naturally grown and worked in stone to ensure maximum quality. In October 2015, Tenuta San Carlo embarked on the multi-year transition path to certified organic production. In fact, very strict ecological standards are followed in the production of rice and no herbicides, pesticides or fungicides are used. Instead, they prefer to start preparing the soil several months before sowing to naturally avoid the growth of weeds and other potential unexpected events that would hinder a healthy harvest. Castiglione DOC Maremma Toscana Cacciagrande, Vinification:
fermented in stainless steel at controlled temperature for 30 days, malolactic fermentation and maturation take place in 300lt Tonneaux of French Allier oak, medium to long maturation, medium toasting, for 12/14 months. Bottle ageing lasts from 4 to 6 months
C'era e Non C'era Val Del Melo, Tasting notes:
A wine with a rich and harmonious bouquet, it presents fruity notes of red berries enveloped by hints of tobacco and chocolate, the taste is fine with a soft and long lasting finish
The grapes are destemmed and left almost entirely intact. Fermentation takes place at a controlled temperature of 27 degrees and maceration lasts about 25/30 days, followed by melolactic fermentation. Ageing takes place in 10hl French oak barrels for approximately 12 months, after which the wine is blended and bottled.
Val Del Melo
The Val Del Melo winery is located near the town of Castiglione della Pescaia, its proximity to the sea combined with its location at the bottom of the valley means that Pian di Rocca is characterised by a particularly temperate microclimate, 2-3 degrees higher than the local average. It is no coincidence that for years the area was the production site for the first fruits and vegetables of the Maremma.
