Het bedrijf Il Ghiacciale ligt op de hellingen van de Monte Amiata, op de heuvels van de hoge Toscaanse Maremma, waar de Cinta Senese-varkens groeien volgens oude en natuurlijke ritmes. Met meer dan 35 hectare eiken en weiden groeien hun varkens gedurende minstens drie jaar vrij rond om te grazen op eikels, bessen en knollen volgens een oude traditie die perfect aansluit bij de principes van biologische en ethische dierverzorging, om zo een vlees met een unieke smaak aan te bieden dat wordt omgevormd door bekwame handen die oude boerentradities volgen zonder gebruik van kleurstoffen of conserveringsmiddelen.
