Vin Santo del Chianti Classico DOCCastellare di Castellina, proefnotities:

Levendige amberkleur. In de neus barst het van gedroogd fruit, honing, karamel en gekonfijt fruit. In de mond is hij breed en omhullend, met een sensatie van kastanjemeel en een lange, aangename afdronk.

Niet te droog en niet te zoet. Geproduceerd in strikte overeenstemming met de traditie, maar met Malvasia Bianca en een kleine hoeveelheid Trebbiano-druiven die zijn gedroogd in een geventileerde ruimte en niet op “cannicci” (speciale rieten oppervlakken). En daarna in half-barriques met bezinksel van 20 tot 30 jaar oud (“madri”). Er is nooit genoeg.
