Antonio Mattei
Antonio Mattei was a 19th-century Florentine confectioner, famous for creating one of Italy's most renowned biscuits: the Prato biscuit, or cantuccio. In 1858, Antonio inherited the family pastry shop and began experimenting with new recipes, including that of cantucci. These biscuits, made from flour, eggs, sugar, almonds and pine nuts, were baked twice to make them crispy and long-lasting, ideal for storage during long sea voyages. Antonio Mattei's biscuit factory soon became famous regionally and nationally, so much so that in 1895 it was chosen to represent Tuscany at the International Exhibition in Bordeaux. Since then, the Prato biscuit has become a symbol of Tuscan cuisine and one of the best-loved sweets in Italy and abroad.

Olio Abbraccio
Olio Abbraccio was born in Seggiano, on the slopes of Monte Amiata, a small medieval village of about 1,000 people, but surrounded by centuries-old olive trees. Seggiano also gives its name to the cultivar, the Olivastra Seggianese, a plant that withstands the low temperatures of Monte Amiata's winters. The antioxidant properties of Abbraccio mean that this oil can be used daily both for cooking and especially for raw seasoning to benefit from all its nutritional properties.

Macelleria Fabbrini
In 1948, Mario Fabbrini founded the 'Macelleria Fabbrini' in San Giovanni Valdarno, a small town in the province of Arezzo. In addition to his wife Rina, over time his sons, Carlo and Andrea, joined the business and now run the family butcher's shop, considered one of the oldest in the Valdarno Aretino. Even today, you can still smell the fragrances and aromas of the past as the butchering and processing of meat is done just as it was in the past.

Il Baggiolo
Baggiolo produces juices, compotes and fruit-based sauces at an altitude of 1400 metres. Living above 1000m altitude means a change of perspective. Respect for nature, passion for the land, the quest for a healthy life and natural food are feelings that are stronger, more tenacious in the mountains. In Abetone, the woods and snow-capped peaks tell of great ski champions, but in the high-altitude heaths, the undisputed protagonist of the stories is the wild bilberry, which has always been harvested here in large quantities. Thus began the story of Baggiolo, at 1400 metres above sea level, with Leandro and Marilena who, in the 1980s, opened a small workshop to process the fruits of the undergrowth. Production of the first jams and juices began, following recipes handed down from generation to generation. Hystory of Pasta Fabbri:
Since 1893 in Strada in Chianti, from father to son, the Fabbri family has been making pasta in the same way, without any changes, in the same square in the center of the village. At Pasta Fabbri, they still respect traditional pasta-making techniques: drying is ‘very slow’ (from 72 to 144 hours depending on the format), temperatures are strictly below 38°C and the pasta is drawn ‘al bronzo’, i.e. with the help of original bronze dies from the 1950s.

Vibrant amber colour. The nose is bursting with dried fruit, honey, caramel and candied fruit. On the palate it is broad and enveloping, leaving a sensation of chestnut flour and a long, pleasant finish.
Neither too dry nor too sweet. Produced in strict accordance with tradition, but with Malvasia Bianca and a small amount of Trebbiano grapes dried out in an aired area and not on “cannicci” (special wicker surfaces). And then in half-barriques with 20 to 30 year old deposits (“madri”). There’s never enough.

C'era e Non C'era Val Del Melo, Tasting notes:
A wine with a rich and harmonious bouquet, it presents fruity notes of red berries enveloped by hints of tobacco and chocolate, the taste is fine with a soft and long lasting finish
The grapes are destemmed and left almost entirely intact. Fermentation takes place at a controlled temperature of 27 degrees and maceration lasts about 25/30 days, followed by melolactic fermentation. Ageing takes place in 10hl French oak barrels for approximately 12 months, after which the wine is blended and bottled.

The Val Del Melo winery is located near the town of Castiglione della Pescaia, its proximity to the sea combined with its location at the bottom of the valley means that Pian di Rocca is characterised by a particularly temperate microclimate, 2-3 degrees higher than the local average. The history of Macelleria Belli:
Their story begins on a small farm in the Tuscan countryside, surrounded by cypress trees and very close to the town of Pienza.
At the end of the 1960s, a young man, Alfiero, moved away from this farm. In search of better fortune, he came to a small town, Torrita di Siena, then the centre of fashionable and commercial life in the area, with well-established activities and a rich and prosperous population, In this town he took over a small butcher's shop and since then everything that followed is the story of a life dedicated to work and the search for the best, where by best is meant good. His experiences at the Pienza farm, in fact, helped him recreate the ancient flavours of the Tuscan peasant tradition, to offer his customers the best in terms of genuineness and tastiness.
The small butcher's shop expanded to become a small charcuterie where these ancient family recipes were revived.
After several family members joined the company, a dream came true: the opening of a large butcher's shop with a charcuterie and ham factory attached just outside the 14th-century walls of Torrita. All this happened in 2002 and since then the business has done nothing but grow, thanks to the passion of a life spent chasing the joys of the palate.

The Chianti Classico DOCG Riserva Castello di Monsanto 90% Sangiovese and 10% of Canaiolo & Colorino is the result of vinification in temperature-controlled truncated conical steel vats with a system of draining and pumping over for about 18/20 days. The wine is then refined partly in 38 HL oak casks and partly in second passage tonneaux for about 18 months. Finally, it rests in the bottle for about 6 months.

There are two places at Castello di Monsanto that capture every visitor for the charm and the magic that is perceived: the Poggio’s hill and the historic cellar. Being able to transmit at least a tenth of the emotions you experience visiting the Monsanto winery is very difficult. The aromas, the echoes, the silences, the layers of noble molds make it a unique place that deserves at least one visit. The company has its origin from here. So from a climb on the Poggio and from a descent into the cellar, the idea of making a Cru in Chianti Classico was born for the first time. It was 1962 when the first 6,000 bottles of the Chianti Classico Riserva Il Poggio were produced. Of the 72 hectares planted with vineyards, between 260 and 310 meters s.l.m., 56 ha are in Sangiovese, the vine in which the company has deeply believed from the beginning. The Sangiovese clones present in the vineyards come from a mass selection of vines found in the vineyard Il Poggio, “the mother” of all the vineyards of Monsanto. In a small percentage are then present the two historical vines of the Chianti Classico vine: Canaiolo and Colorino.

The Caseificio Fiorino dairy is located in a place of extraordinary charm and historical value, the medieval village of Roccalbegna on the slopes of Mount Amiata. The milk used to produce our cheeses comes exclusively from selected local farms in the neighboring municipalities: Roccalbegna, Saturnia, Semproniano, Scansano, Arcidosso, Cinigiano, Campagnatico, and Grosseto. After internal analysis, a selection is made based on the characteristics of the milk and the type of cheese to be made. The aim is to achieve the highest quality regardless of yield. Each processing step is carried out by hand by experienced cheesemakers. In fact, their Pecorino Toscano cheeses are awarded every year in the most important global competitions.
