Hystory of Pasta Fabbri:
Since 1893 in Strada in Chianti, from father to son, the Fabbri family has been making pasta in the same way, without any changes, in the same square in the center of the village. The grapes are destemmed and left almost entirely intact. Fermentation takes place at a controlled temperature of 27 degrees and maceration lasts about 25/30 days, followed by melolactic fermentation. Ageing takes place in 10hl French oak barrels for approximately 12 months, after which the wine is blended and bottled.

When tasting their rice, you can taste the flavors of the Maremma. Tenuta San Carlo is a unique place, an out-of-the-ordinary farm. Located in the plain of the Ombrone river, inside the Maremma Park, Tenuta San Carlo is immersed in one of the most natural and unspoiled landscapes of Tuscany. To produce top-quality rice, they listen to the land and respect nature, without wanting to dominate it. From the preparation of the soil, to the selection of the seed up to the timing of the harvest, they follow an ethics of sustainability and pay close attention to details in every phase of the process. “From our land to your table” is the slogan of Tenuta San Carlo, speaking of its rice. All rice is naturally grown and worked in stone to ensure maximum quality. In October 2015, Tenuta San Carlo embarked on the multi-year transition path to certified organic production. In fact, very strict ecological standards are followed in the production of rice and no herbicides, pesticides or fungicides are used. Located in the centre of the Tuscan coast, in Follonica, the company established its headquarters in the mid-1960s and since then has focused its dairy production on typical cheeses from the Maremma area that are renowned throughout the world. The factory, located in the industrial area of Follonica, covers an area of approximately 4,000 square metres, which houses the production facilities and the preparation of the finished product before sale. Particular attention is paid to the maturing phase, which has made it necessary to create a suitable environment away from the production site, specifically in Castel del Piano, on Mount Amiata, where the cheese matures naturally in the mountains at an altitude of 700 metres above sea level, creating the perfect balance of flavours typical of these cheeses.

Only Tuscan cherry tomatoes, with no added salt, picked at the right stage of ripeness, are selected and processed as quickly as possible to preserve all their freshness. Only plump cherry tomatoes with a genuine flavour and intense red colour are used. Peeled cherry tomatoes, with their versatility, are an ingredient particularly loved by both chefs and amateur cooks.
La Selva Organic Farm:
LaSelva entered the world of Italian organic farming in 1980 in southern Tuscany, in Albinia – Orbetello (GR), a place that is still the heart of all its activities today. Today, on over 600 hectares of agricultural land and in compliance with all European Union regulations on organic farming, it grows vegetables, fruit, cereals and grapes for wine production. It also produces its own animal feed, from which it also obtains the fertiliser that nourishes the soil, thus creating a closed-cycle agricultural system.

Mieleria Rossi Novaro was founded in the 1960s in Casentino. It was in these mountains that Novaro, the founder, developed a passion for bees and honey production. The settled business soon became nomadic in order to diversify the types of honey produced, searching for the plants and essences loved by bees. The hives were moved partly to Maremma, far from sources of pollution. Thanks to the proximity to the sea and the mild climate, it is possible to produce light-coloured honeys, such as sunflower, clover and sulla. Over the years, Novaro expanded his business and the ever-increasing number of hives convinced him to move permanently to Grosseto, while maintaining a close relationship with his homeland, where he continues to produce forest and chestnut honey. In the workshop at the headquarters, fruit is processed to produce extra jams, compotes to accompany cheese and fruit in syrup, as well as honey-based gastronomic specialities and much more. In keeping with its commitment to the environment, “La Mieleria Rossi Novaro” is self-sufficient in the production of the electricity used in its workshop.
