The olives are processed on the same day at the modern continuous-cycle mill, preserving their organoleptic and nutritional values.Filtered and stored in stainless steel containers, with a controlled temperature between 14 and 18 degrees, ensuring the absence of oxygen.
It has a very bright emerald green colour and a fresh aroma with hints of almond and green banana mingling in a bouquet. On the palate it is delicate with a bitter aftertaste of sweet chilli and spicy paprika notes.

Cruditeè of artichokes Scovaventi:
Prepared using only artichokes of the Violetto di Toscana variety. The artichokes are harvested when they are still very small and fresh during the coolest hours of the day, to guarantee maximum quality. They are then finely chopped and left raw to preserve their intense flavour, then dipped in lemon juice and organic extra virgin olive oil.
