San Polo is situated on the south-eastern slope of Montalcino hill, at an altitude of 450 metres, the 22 hectares of the estate, 16 of which are planted with Sangiovese, are characterized by a dry, breezy microclimate, with wide diurnal and seasonal temperature swings. In the cellar, an admirable example of bio-architecture, designed to minimize energy consumption and environmental impact, the grapes are processed with artisan care to enhance the finesse of the Sangiovese aromas. The essence of San Polo, in fact, is to take the wines back to the vineyard that generated them, so as to express the concept of terroir to the full. The Capanna winery is still run exclusively by the family: moreover, it is Amedeo Cencioni himself, Patrizio’s son and representative of the fourth generation, who oversees the oenological and agronomic side of the winery.
Brunello di Montalcino Caprili, Tasting notes:
Soft and less tannic than the Riserva, the Brunello has an intense colour, ample aromas with notes of red berries. On the palate it gives a well-balanced body with well-blended tannins in the structure, which ensures elegance and longevity.
Sangiovese from Montalcino

Sangiovese grosso has found in montalcino a special terroir that, combined with the experience of the winegrowers, has created a legendary product famous throughout the world for its qualities.
Caprili
Caprili estate was founded in 1965 by Alfo Bartolomei and the first bottle of Brunello di Montalcino Caprili is the 1978 vintage, introduced on the market in 1983. The vineyards are raised by spurred cordon, they are at an altitude ranging from 225 to 340 m above sea level. The southwest exposure of the company, which looks towards the sea, enjoys the mitigating action of the winds that avoid stagnant humidity that can cause fungal attacks on the vineyards. Therefore the only interventions are based on contact substances such as copper and sulfur. The vinification follows the natural processes favoring the use of native yeasts, contained in the grapes themselves, this gives the wine its own precise territorial identity, easily recognizable and traceable. But at the same time never homologated in taste and perfumes, rather than following the changeability of the seasonal trend of the vintages, and expressing their particularity. The Caprili company covers an area of 58 hectares, southwest of the territory in the municipality of Montalcino, on the slope of the hill that slopes towards the Orcia and Ombrone rivers. The vineyard area is 15.5 hectares of which 14.5 are grown in Sangiovese Grosso from which Brunello di Montalcino DOCG and Rosso di Montalcino DOC

Rosso di Montalcino Molino di Sant Antimo is a wine of nature and characteristics similar to Brunello, This Red Wine From Montalcino has a deep ruby red color, soft and rich, with a bouquet of extraordinary freshness. Aged in oak barrels for a year it will ripen comfortably, improving in the 3-5 years after bottling, becoming even finer and more elegant.
Molino di Sant'Antimo
Molino di Sant'Antimo consists of about 40 hectares of land with a south/south-west exposure, sloping from 250 to 200 metres above sea level down to the Orcia river. The soils have a composition of schist, galestro and crushed stone, rich in mineral salts. The vine plantations have developed gradually over the years. The vinification area contains modern steel vats for 1,000 Ql. The ageing area houses the large French Allier oak barrels and the French and American oak casks.
Brunello di Montalcino DOCG San Polo, Tasting notes:
Deep ruby red in colour with garnet highlights, it opens with hints of wild berries such as blackberry, blackcurrant and blueberry, followed by liquorice, spices and intense balsamic notes. The tannins are well defined and the finish is long with extraordinary aromatic persistence. It is a wine of great concentration and structure, which amazes the palate with its intensity, elegance and great balance.
San Polo
San Polo is situated on the south-eastern slope of Montalcino hill, at an altitude of 450 metres, the 22 hectares of the estate, 16 of which are planted with Sangiovese, are characterized by a dry, breezy microclimate, with wide diurnal and seasonal temperature swings. In the cellar, an admirable example of bio-architecture, designed to minimize energy consumption and environmental impact, the grapes are processed with artisan care to enhance the finesse of the Sangiovese aromas. The essence of San Polo, in fact, is to take the wines back to the vineyard that generated them, so as to express the concept of terroir to the full. Man’s intervention is nothing more than bringing the wine closer to nature, adopting a viticulture that respects the soil, the microclimate and the biodiversity of the place, so that the biological cycle of the vineyard and the pedoclimatic context are in perfect harmony.
Rosso di Montalcino DOC San Polo, Tasting notes:
Composite ruby red colour, clear and bright. On the nose it has a scent of fresh berries and light marasca cherries together with hints of blackberry and black cherries followed by a pleasant hint of vanilla. hints of blackberry and black cherries followed by a pleasant hint of vanilla. Good intensity and fragrance. The palate is warm, soft, medium structured and with balanced tannins.

Obtained from so-called 'friccioli' (fried meat trimmings not used for other productions) added to pork rinds boiled in water. The mixture is then seasoned with salt and spices and a small amount of blood to give it its typical colour. Stuffed into the typical casing called 'muletta', it is cooked again in water. Excellent as an appetiser served on a slice of warm bread

Talenti
Pierluigi Talenti decided to move from the mountains of Romagna to the gentle, sunny Montalcino hills. After a few years, he decided to buy the farm and all its land that had so fascinated him and made him fall in love. Over the years Pierluigi has dedicated himself to clonal research of Sangiovese on the land, bringing his wines to the highest levels of quality. Today Riccardo Talenti, respecting tradition, continues the research and continues the work with the same passion and stubbornness as his grandfather. The wines mature well over two years in precious Allier and Slavonian wood. They are then left to refine in the bottle for the time necessary to enhance the aromas and character that make them unique and unrepeatable. Harvesting is done by hand using small containers to preserve their integrity, then only the best grapes and bunches are selected to get the best from each harvest.
