When tasting their rice, you can taste the flavors of the Maremma. Tenuta San Carlo is a unique place, an out-of-the-ordinary farm. Located in the plain of the Ombrone river, inside the Maremma Park, Tenuta San Carlo is immersed in one of the most natural and unspoiled landscapes of Tuscany. To produce top-quality rice, they listen to the land and respect nature, without wanting to dominate it. From the preparation of the soil, to the selection of the seed up to the timing of the harvest, they follow an ethics of sustainability and pay close attention to details in every phase of the process. “From our land to your table” is the slogan of Tenuta San Carlo, speaking of its rice. All rice is naturally grown and worked in stone to ensure maximum quality. In October 2015, Tenuta San Carlo embarked on the multi-year transition path to certified organic production. In fact, very strict ecological standards are followed in the production of rice and no herbicides, pesticides or fungicides are used. Instead, they prefer to start preparing the soil several months before sowing to naturally avoid the growth of weeds and other potential unexpected events that would hinder a healthy harvest. To improve the quality and fertility of the soil, they use techniques such as plant cover and crop rotation. Only two types of rice are produced: Carnaroli Rice and Ribe.

Scovaventi
Podere Scovaventi was founded by Luca De Filippo and Carolina Rosi, who used to come here to retreat and regenerate in the breaks between theatre tours.
Having fallen in love with the countryside, expert gourmets, Carolina and Luca slowly began to restore the farmhouse, improve the soil and prepare preserves with the many products the garden offered them.
In 2015, they acquire olive groves in the vicinity of the company with other native varieties, thus taking production from family consumption to external distribution. In the same 2015, however, Luca passed away and Carolina decided to pursue this dream alone.

Antonio Camillo’s wine cellar is located not far from Capalbio with vineyards extending over about nine hectares. They are mainly composed of old vines, between 40 and 50 years old. The varieties cultivated are obviously Ciliegiolo, with a small percentage destined for Vermentino and Sangiovese. Traditional working methods are followed between the rows, favouring manual operations and limiting interventions for health defence, using exclusively natural products such as copper and sulphur. Even in the cellar, the working method is oriented towards accompanying the wine in its natural course, trying to intervene as little as possible, without forcing the result of the harvest in any way. The wines that are signed each year by Antonio Camillo are recognisable by their elegant style, in which the balance of aromas and flavours is the ultimate goal.

The Cantina La Cura, owned by Enrico Corsi, is a young and dynamic production company consisting of fifteen hectares of vineyards in the heart of the denomination Maremma Toscana Doc and Monteregio di Massa Marittima, located in the high Maremma Toscana on the Tyrrhenian coast. The main varieties hosted are Sangiovese, Cabernet Sauvignon, Merlot, and Aleatico for a total annual production of 30 thousand bottles. The freshly harvested grapes are vinified starting with a short maceration on the skins to give the characteristic rosé colour and extract the maximum of the delicate aromatic part. All this takes place in small steel tanks adequately equipped to control the temperature during the entire process right up to bottling.

The Guicciardini Strozzi family boasts over a thousand years of history. Wine producers since time immemorial (since 994), have several estates scattered throughout Tuscany with deep roots in the territory and prominent personalities among their ancestors. One of the most illustrious is Lisa Gherardini del Giocondo, better known as La Gioconda or more simply Mona Lisa, immortalized in the most famous painting by Leonardo da Vinci; the current members of the family represent the fifteenth generation of descent.

The production of Frantoio Franci extra virgin olive oil began almost 70 years ago on the hill of Montenero d’Orcia in Tuscany, on the slopes of Mount Amiata. All Frantoio Franci labels follow a well-defined quality standard in terms of organoleptic characteristics and chemical parameters, which guarantee the consumer continuity of quality from year to year: oils that do not meet the targets are downgraded. Le Fontacce
The farm " Le fontacce" was born in 2008, on a farm existing since the beginning of 1800, is certified organic on all its products. Le Fontacce is a producer of the famous Fagiolo Zolfino Slow Food which is so called for its pale yellow color like sulfur, has a round shape and its pasta is creamy and exceptionally tasty. Traditionally it is sown on the hundredth day of the year, also called by farmers “day of the hundred”. It is very connected to climatic conditions and often produces a very small harvest, so much that its cultivation was almost abandoned, in preference to beans having a more reliable yield.
