Scovaventi
Podere Scovaventi was founded by Luca De Filippo and Carolina Rosi, who used to come here to retreat and regenerate in the breaks between theatre tours.
Having fallen in love with the countryside, expert gourmets, Carolina and Luca slowly began to restore the farmhouse, improve the soil and prepare preserves with the many products the garden offered them.
In 2015, they acquire olive groves in the vicinity of the company with other native varieties, thus taking production from family consumption to external distribution. In the same 2015, however, Luca passed away and Carolina decided to pursue this dream alone.
The company creates many varieties of products in its territory, pickles, jams, honeys and many others; the quality of these products comes from tradition and love for the land and its fruits.

Tenuta Gardini
Tenuta Gardini is a bond of love and passion that their family has had with this territory, through the centuries and generations. The olive tree is the tree that represents the essence of spiritual life, the longevity of thought; the olive tree is the force that passes through time; its veins are the symbol of life, lived with intensity and passion. The olive tree is the tree with the fundamental fruit. Their olive oil comes mainly from centenarian trees that are located on the sunny hill. The olive harvest begins in November where it is harvested by hand and the pressing of the olives is carried out cold and on the same day in the company’s oil mill.

La Selva Organic Farm:
LaSelva entered the world of Italian organic farming in 1980 in southern Tuscany, in Albinia – Orbetello (GR), a place that is still the heart of all its activities today. Today, on over 600 hectares of agricultural land and in compliance with all European Union regulations on organic farming, it grows vegetables, fruit, cereals and grapes for wine production. It also produces its own animal feed, from which it also obtains the fertiliser that nourishes the soil, thus creating a closed-cycle agricultural system.

of fresh herbs, green almonds and tomato leaves, with an elegant bitterness and a slightly peppery finish. It enhances dishes without overpowering them, perfect with raw fish and roasted vegetables. It is an exclusive, precise and expressive oil that gives dishes a unique signature.
La Corneta:
Rooted in Tuscany, in the heart of the prestigious Chianti Colli Aretini terroir, La Corneta bears the mark of time and the seasons. The wines are produced from 8 hectares of organically cultivated vineyards, where historic grape varieties coexist with rarer ones: Sangiovese, Pinot Noir, Syrah, Chardonnay, Sauvignon Blanc and Incrocio Manzoni. This diversity, combined with living soils and controlled yields, provides health and expressive raw materials. The approach is then based on rigorous vinification and careful selection of the containers for ageing: temperature-controlled stainless steel tanks, barriques and tonneaux of different sizes and vintages, terracotta and cocciopesto amphorae are tools that are used with precision. This meticulous, contemporary and demanding method is part of a constant search for balance, structure and natural complexity, without standardising taste.

Aceto from Arezzo
Aceto in Italy is (not) only made in Modena. The Natali family wanted to dispel this myth by starting to produce quality vinegar in Tuscany. With the arrival of the new generation in the company and the idea of exploiting the knowledge of natural fermentations that had always been used at home for wine, the production turned to vinegar. A winning intuition that in just a few years has led this company to become the most important in the region, with the Acetoscana brand. Sangiovese grapes are harvested in the Chianti hills. Vinification and fermentation, which are essential to obtain a quality vinegar, are constantly controlled and managed in a natural way. The key part of the process is a slow acetic fermentation at a constant temperature that requires long periods of time and continuous controls, carried out using a superficial static method, reminiscent of the ancient Orleans method.

Bruno and Brigitte Widmer decided to produce only wines of the highest quality. What began as a hobby then, has grown steadily over the past 40 years to become one of the most important wineries in Tuscany. Brancaia loves and deeply respects the traditions of the past, but at the same time is not afraid to imagine new and modern approaches and organic viticulture has always been central for Brancaia.

Tonnina pickled from Isola d'Elba
High quality tuna, processed by skilled artisans on the island of elba.
Conserveria Tonnina
The conserveria tonnina takes its name from a specific processing of a part of the tuna fish typical of the island of Elba. The shop is located near the historic cove in Portoferraio, in front of the fishermen’s boats. Here, traditional recipes with the original flavour of the ancient Elban tradition are prepared and preserved, faithfully following the methods, customs and recipes of seafaring custom. One of the values that the Conserveria Tonnina boasts is the quality of the fish products, all caught in the sea adjacent to Elba and in Italy. The products are diverse and undergo specific processing, the most commonly used fish being tuna, anchovies, skipjack and mackerel. The products are rich in omega 3 and protein, and the processing and preservation contribute to maintaining the flavour without altering it.

Riso Maremma
Maremma rice is of the highest quality; a quality that is due not only to the naturally favourable climatic conditions of the Grosseto plain, but also to the fact that the land on which the rice itself grows has only recently been dedicated to this cultivation and is therefore not yet impoverished by the repeated monocultures seen in other parts of Italy.

Villa Sant'Anna is an Italian winery located in Montepulciano, Tuscany. Founded in 1971 by Giuseppe and Silvana Bianchini, the winery has a history that goes back long before its creation.Over the years, the estate passed from hand to hand, until it was bought by the Bianchini family in 1971. Giuseppe and Silvana Bianchini decided to dedicate themselves to grape growing and wine production, with the aim of creating high quality wines that were an authentic expression of the Tuscan terroir.Their focus on quality and environmental sustainability led them to adopt organic farming methods and to limit the use of chemicals. La Piana
The organic farm La Piana Capraia is located on the island of Capraia, within the Tuscan Archipelago National Park. The area to which it belongs, called “Il Piano S. Stefano”, is a magical and uncontaminated place where aromas, sounds, colors, and traditions blend with ancient tastes and knowledge, in which time seems to have stopped. The landscape, guarded by the agricultural presence, is designed by the discontinuity of vine rows in the Mediterranean scrub, terracing, dry stone walls, ancient cisterns, and by native ornamental species such as oleander, rosemary, ancient rose;

Vermentino Poggio Nibbiale, Tasting notes:
Poggio Nibbiale's Vermentino is a creamy white wine. It combines fresh citrus aromas with aromas of ripe tropical fruit that give it a unique style.
Poggio Nibbiale
That of Poggio Nibbiale is a special story, which begins far away, in Germany... The Buchheim family had always dreamed of having a vineyard in Tuscany. Their wish came true when the Poggio Nibbiale winery was founded in 1998. Their dream of cultivating wine in the beautiful scenery of southern Tuscany became reality. The vineyards of Poggio Nibbiale are located in the hills of Maremma between Scansano and Magliano, 300 metres above the Tyrrhenian Sea, with a magnificent view of Giglio Island, Elba, Montecristo and the Monte Argentario peninsula.
Vermentino Poggio Nibbiale, Vinification:
Selective harvesting by hand, destemming, pressing with a pneumatic press and subsequent fermentation in temperature-controlled stainless steel tanks. After a period of bâtonnage, this wine matures in stainless steel tanks until bottling. In the case of the Vermentino grape variety, decantation and in particular the natural activity of the grape's own enzymes are of great importance. The grape variety is very demanding.
