Harvesting takes place when the grapes are fully ripe, fermentation is carried out exclusively with natural yeasts in cement tanks, the cap is submerged manually for the duration of fermentation, which lasts approximately 2 weeks for each variety. After racking and spontaneous malolactic fermentation, the wines are normally blended before the end of the year, after which they are aged for a year in unglazed cement vats. After the appropriate filtrations, it is bottled and rests for at least 6 months in the bottle

Fabio Motta’s company started out with a small plot of land comprising 4 hectares of vines about 20 years old and then grew to about 7 hectares. On first visual inspection its nature is clear, deep and impenetrable ruby red. The nose opens with notes of cherries in alcohol, liquorice, undergrowth and Mediterranean scrub.

PietraNova is located in Tuscany in the Bolgheri D.O.C. area, one of the most prestigious territories for the important production of wines of the highest quality, recognised by Italian and foreign consumers. The territory is sheltered from winter winds by a chain of hills that runs parallel to the coast, while in summer, it is swept by refreshing winds that are generated to the west, from the Tyrrhenian Sea.

Moreover, the olfactory examination highlights the intense, complex and ethereal character of this superb wine, rich in notes of cherries in spirit, liquorice, undergrowth. Finally, in the mouth it is structured, full-bodied, rich in elegant tannins.

The olive tree is the tree that represents the essence of spiritual life, the longevity of thought; the olive tree is the force that passes through time; its veins are the symbol of life, lived with intensity and passion. The olive tree is the tree with the fundamental fruit. Their olive oil comes mainly from centenarian trees that are located on the sunny hill. The olive harvest begins in November where it is harvested by hand and the pressing of the olives is carried out cold and on the same day in the company’s oil mill.

Olivodoro
The Olivodoro farm was established in 1972, in Suvereto. It selects and multiplies fruit and vegetable varieties suitable for artisanal processing and transformation into jams and marmalades, processing the freshly harvested fruit using vacuum technology, thus preserving the fruit and vegetables from oxidation and concentrating the fructose contained in the fruit itself, thus preserving the genuineness, integrity, flavour and unmistakable freshness of the fruit. Olivodoro products are therefore free of preservatives, pectin, gelatin and antioxidants.
