Sbriciolona is the most characteristic of Tuscan cured meats. It is obtained by finely mincing choice cuts of Cinta Senese meat and adding wild fennel seeds to the mixture.
The consistency is very soft and the slice tends to 'crumble'. The aroma and taste are unmistakable. Free of any allergens, it is stuffed into natural gut.
