San Polo
San Polo is situated on the south-eastern slope of Montalcino hill, at an altitude of 450 metres, the 22 hectares of the estate, 16 of which are planted with Sangiovese, are characterized by a dry, breezy microclimate, with wide diurnal and seasonal temperature swings. In the cellar, an admirable example of bio-architecture, designed to minimize energy consumption and environmental impact, the grapes are processed with artisan care to enhance the finesse of the Sangiovese aromas. The essence of San Polo, in fact, is to take the wines back to the vineyard that generated them, so as to express the concept of terroir to the full. Man’s intervention is nothing more than bringing the wine closer to nature, adopting a viticulture that respects the soil, the microclimate and the biodiversity of the place, so that the biological cycle of the vineyard and the pedoclimatic context are in perfect harmony.

The Fabrizzi Simone lab is located in the beautiful village of Pienza, in the heart of the Val d’Orcia. The company was born thanks to Fabrizzi Guerrino’s passion for truffle hunting who, since the 1960s, used to collect the precious tubers with his dog. Mascagni Farm has inherited from past generations of farmers who cultivated 600 old olive trees of the indigenous Frantoio, Moraiolo, and Leccino varieties in the Val d’Orcia. An olive grove made in the old way from which derives an extra virgin olive oil that expresses to the maximum the scents and flavors of Pienza’s territory. Even in such a traditional olive-growing, Mascagni Farm try to use as much technology as possible in the field of natural bio-stimulants and organic fertilizers to keep the old olive trees strong and healthy.

Caprili
Caprili estate was founded in 1965 by Alfo Bartolomei and the first bottle of Brunello di Montalcino Caprili is the 1978 vintage, introduced on the market in 1983. The vineyards are raised by spurred cordon, they are at an altitude ranging from 225 to 340 m above sea level. The southwest exposure of the company, which looks towards the sea, enjoys the mitigating action of the winds that avoid stagnant humidity that can cause fungal attacks on the vineyards. Therefore the only interventions are based on contact substances such as copper and sulfur. The vinification follows the natural processes favoring the use of native yeasts, contained in the grapes themselves, this gives the wine its own precise territorial identity, easily recognizable and traceable. But at the same time never homologated in taste and perfumes, rather than following the changeability of the seasonal trend of the vintages, and expressing their particularity. The Caprili company covers an area of 58 hectares, southwest of the territory in the municipality of Montalcino, on the slope of the hill that slopes towards the Orcia and Ombrone rivers. The vineyard area is 15.5 hectares of which 14.5 are grown in Sangiovese Grosso from which Brunello di Montalcino DOCG and Rosso di Montalcino DOC

Montalcino red wine
Rosso di Montalcino DOC Capanna is a classic 100% Sangiovese wine from Montalcino. Goes perfectly with pasta with meat sauce, roast white and red meat, mushrooms, cold meats and cheeses. Vinification takes place with alcoholic fermentation with maceration of the skins (18-20 days) at controlled temperature and spontaneous malolactic fermentation, both in truncated conical Slavonian oak vats. Refinement in Slavonian oak barrels from 20 to 32 hl for 6-10 months; followed by refinement in the bottle for at least 3-4 months.
