Vin Santo and Passito from Tuscany
Tuscany is admired all over the world for its natural beauty, rich history and exceptional food and wine culture. Two wines stand out in particular: Vin Santo and Passiti.
To demonstrate the variety and quality of Vin Santo and Passito production in Tuscany, we offer a selection from the hills of Chianti to the islands of the Tuscan archipelago:
Aleatico Dell'Elba Passito DOCG Alea Ludendo Tenuta delle Ripalte
It is an exclusive passito characterised by a refined structure and a distinct aroma. It is the result of the ripeness and concentration that the sun gives it, as well as the mineral richness of the soil on which it grows. The entire area is a natural refuge completely immersed in the Tuscan Archipelago National Park, a fascinating and unique place;
Aleatico Sovana DOC Superiore Fattoria Aldobrandesca
A wine that is characterised by its ruby red colour. When tasting it, the nose is incredibly delicate, with notes of wild roses mingling with flavours of cherries and plums. On the palate, it impresses with its exceptional balance of sweetness and freshness and ends with the characteristic rose notes that dominate the finish;
Vin Santo The history of theVin Santo goes back a long way and is closely linked to religious tradition, as it owes its name to the Holy Sacrifice of the Mass at which it was used. Its production is a rather lengthy and complicated process. After the harvest, the grapes are dried in "vinsantaie" (cellars) on grids ("cannicci") for several months. In March after the harvest, the dried grapes are pressed and the must obtained is slowly fermented in small oak, chestnut or ceramic containers known as "caratelli". The Vin Santo then matures over a period of 3 to 10 years, depending on the quality and designation of origin;
Passito The other sweet wine of Tuscany is the passito, which includes, for example, the Aleatico dell'Elba Passito DOCG Alea Ludendo Tenuta delle Ripalte and the Cristino Aleatico Passito IGT La Piana belong to. Like Vin Santo, Passito wines are also made from dried grapes, although the production method can vary. What makes them unique is the incredible concentration of aromas and flavours, which vary depending on the terroir and grapes used; Moscadello di Montalcino DOC Vendemmia Tardiva Capanna The wine has a golden colour and immediately stands out on the nose with a pronounced aroma of acacia honey, apricots, pears and candied fruit, characterised by a remarkable persistence. The flavour is sweet, perfectly balanced by the acidity, with a pleasant and complex structure, crowned by a pronounced aftertaste;
Vin Santo Chianti Classico DOC Castellare di Castellina
It has a bright amber colour. On the nose, it offers a rich profile ranging from dried fruit to honey, caramel and candied fruit. In the mouth it is rich and engaging, reminiscent of chestnut flour and leaves a long and pleasant finish.
Occhio di Pernice Vin Santo di Montepulciano DOC Avignonesi
The flavour is sweet and spicy, the olfactory notes are lively and are complemented by hints of dried apricots and smoked hazelnuts, enriched with light tones of Christmas spices. A wine that surprises with its intensity and depth at every tasting. Its incredibly long-lasting flavour makes it a truly exceptional creation;
A sip of these wines is a journey through the wine culture and tradition of Tuscany, captured in a glass. They are the ideal wines to round off a meal, with sweet pastries, Tuscan cantucci and blue cheeses. With their refined sweetness, Vin Santo and Passito represent the magic and generosity of Tuscany.
