La Selva Organic Farm:
LaSelva entered the world of Italian organic farming in 1980 in southern Tuscany, in Albinia – Orbetello (GR), a place that is still the heart of all its activities today. Over the years, Novaro expanded his business and the ever-increasing number of hives convinced him to move permanently to Grosseto, while maintaining a close relationship with his homeland, where he continues to produce forest and chestnut honey. Nobile di Montepulciano DOCG Riserva Bossona Cantine Dei, Tasting notes:
Complex, elegant and balanced structure. Ruby-coloured tending to garnet, with intense and elegant aromas, with hints of violets, underbrush and spices, it has a character of finesse, with firm, velvety tannins and a long, deep finish.
Vino Nobile Riserva Bossona is one of the highest expressions of the Montepulciano DOCG. Its grapes come from the vineyard of the same name, one of the most suitable, planted by Caterina’s grandfather, Alibrando, in 1961. The wine became a Riserva in 1999, with long ageing in wood and in the bottle. Without a doubt it is one of the estate’s flagship wines, a symbol of the elegance and grace of Sangiovese in Montepulciano. The yields are very low (about 40 quintals per hectare) and the wine is bottled with the label Bossona Riserva only in the best vintages. The soil is of Pliocene origin, dating back 2.5-5 million years. It is rich in tuff, skeleton and fossils, which are not only strongly draining, but also give the wine structure and minerality. The Bossona vineyard is one of the sunniest areas of Montepulciano and its favourable exposure allows for excellent ripening of the grapes. The complex composition of the soil is perfect for Sangiovese, and the constant ventilation ensures that the grapes are healthy.

Nobile di Montepulciano
Vino Nobile di Montepulciano Cantine Dei is one of the most prestigious Italian wines, the first to be awarded the DOCG and it is the perfect example of the expression that Sangiovese takes in the Montepulciano lands. It is mostly Sangiovese, with small quantities of complementary varieties (5%). Grows in a predominantly clayey soil with the presence of sand (tuff), which gives it an intense colour, a full body and the ability to age. The vinification technique consists of soft pressing, fermentation in stainless steel at a controlled temperature of 26-28°C and maceration on the skins for 15-20 days with pumping over. Finally, it is aged for a minimum of 24 months, of which at least 18 months in 50 hl Slavonian oak casks.
Barco Reale di Carmignano Capezzana , Tasting notes:
Elegant, with notes of black cherry and raspberry well blended with the ripe fruit. ripe fruit. In the mouth it is soft, enveloping, with soft tannins and good body. The acidity is present, but well balanced by the tannic richness. The finish is long, with an aftertaste that tends towards sweet liquorice.
A very small and perhaps little-known DOC, but with wines of great quality. On the outskirts of Florence, wine has always been produced at Tenuta Capezzana.

The Caseificio Fiorino dairy is located in a place of extraordinary charm and historical value, the medieval village of Roccalbegna on the slopes of Mount Amiata. The milk used to produce our cheeses comes exclusively from selected local farms in the neighboring municipalities: Roccalbegna, Saturnia, Semproniano, Scansano, Arcidosso, Cinigiano, Campagnatico, and Grosseto. After internal analysis, a selection is made based on the characteristics of the milk and the type of cheese to be made. The aim is to achieve the highest quality regardless of yield. Castello di Monsanto
There are two places at Castello di Monsanto that capture every visitor for the charm and the magic that is perceived: the Poggio’s hill and the historic cellar. Being able to transmit at least a tenth of the emotions you experience visiting the Monsanto winery is very difficult. The aromas, the echoes, the silences, the layers of noble molds make it a unique place that deserves at least one visit. The company has its origin from here. So from a climb on the Poggio and from a descent into the cellar, the idea of making a Cru in Chianti Classico was born for the first time. It was 1962 when the first 6,000 bottles of the Chianti Classico Riserva Il Poggio were produced. Of the 72 hectares planted with vineyards, between 260 and 310 meters s.l.m., 56 ha are in Sangiovese, the vine in which the company has deeply believed from the beginning. The Sangiovese clones present in the vineyards come from a mass selection of vines found in the vineyard Il Poggio, “the mother” of all the vineyards of Monsanto. In a small percentage are then present the two historical vines of the Chianti Classico vine: Canaiolo and Colorino.

When tasting their rice, you can taste the flavors of the Maremma. Tenuta San Carlo is a unique place, an out-of-the-ordinary farm. Located in the plain of the Ombrone river, inside the Maremma Park, Tenuta San Carlo is immersed in one of the most natural and unspoiled landscapes of Tuscany. To produce top-quality rice, they listen to the land and respect nature, without wanting to dominate it. From the preparation of the soil, to the selection of the seed up to the timing of the harvest, they follow an ethics of sustainability and pay close attention to details in every phase of the process. “From our land to your table” is the slogan of Tenuta San Carlo, speaking of its rice. All rice is naturally grown and worked in stone to ensure maximum quality. In October 2015, Tenuta San Carlo embarked on the multi-year transition path to certified organic production. In fact, very strict ecological standards are followed in the production of rice and no herbicides, pesticides or fungicides are used. Ingredients: Beef tripe, vegetables in varying proportions (onion, celery, carrots), tomato concentrate 6%, extra virgin olive oil 5%, red wine, salt, spices. Beef tripe used: 55 g per 100 g of finished product. Contains sulphites. That of Poggio Nibbiale is a special story, which begins far away, in Germany... The Buchheim family had always dreamed of having a vineyard in Tuscany. Their wish came true when the Poggio Nibbiale winery was founded in 1998. Their dream of cultivating wine in the beautiful scenery of southern Tuscany became reality. The vineyards of Poggio Nibbiale are located in the hills of Maremma between Scansano and Magliano, 300 metres above the Tyrrhenian Sea, with a magnificent view of Giglio Island, Elba, Montecristo and the Monte Argentario peninsula.
Vermentino Poggio Nibbiale, Vinification:
Selective harvesting by hand, destemming, pressing with a pneumatic press and subsequent fermentation in temperature-controlled stainless steel tanks. After a period of bâtonnage, this wine matures in stainless steel tanks until bottling. In the case of the Vermentino grape variety, decantation and in particular the natural activity of the grape's own enzymes are of great importance. The grape variety is very demanding.
Ombra Blu Sassotondo, Tasting notes:
Ruby in colour, very consistent. The nose reveals notes of small red fruits, cedar and black pepper. The taste is concentrated and soft, very long but not heavy. *
The grapes are harvested and selected by hand and vinified separately. Fermentation takes place without the addition of yeast and lasts, including maceration, between 25 and 30 days. The wines mature for 12 months partly in barriques and partly in steel. Subsequently blended and bottled, the wine is aged for a minimum of 6 months in the bottle.

Antonio Camillo:
Antonio Camillo’s wine cellar is located not far from Capalbio with vineyards extending over about nine hectares. They are mainly composed of old vines, between 40 and 50 years old. The varieties cultivated are obviously Ciliegiolo, with a small percentage destined for Vermentino and Sangiovese. Traditional working methods are followed between the rows, favouring manual operations and limiting interventions for health defence, using exclusively natural products such as copper and sulphur. Even in the cellar, the working method is oriented towards accompanying the wine in its natural course, trying to intervene as little as possible, without forcing the result of the harvest in any way. The wines that are signed each year by Antonio Camillo are recognisable by their elegant style, in which the balance of aromas and flavours is the ultimate goal.

The Guicciardini Strozzi family boasts over a thousand years of history. Wine producers since time immemorial (since 994), have several estates scattered throughout Tuscany with deep roots in the territory and prominent personalities among their ancestors. One of the most illustrious is Lisa Gherardini del Giocondo, better known as La Gioconda or more simply Mona Lisa, immortalized in the most famous painting by Leonardo da Vinci; the current members of the family represent the fifteenth generation of descent.
