Mortadella di Prato "Slow Food Presidium"
The typical flavor of ‘Mortadella di Prato’ is given by the contrast between the warm and pungent note of the spices, garlic and sea salt, and the sweet and delicate one of the alkermes. The aroma is penetrating, spicy with a hint of alkermes from the first impact. Its specificity is also reinforced by the choice of cuts of meat used, the traditional and consolidated processing and the particularity of the ingredients, characteristics that make it unique in the Italian gastronomic panorama. Another particular aspect is that cooking is preceded by stewing, which must take place in dedicated premises that ensure progressively decreasing temperatures and increasing humidity, so as to ensure prolonged and gradual drying of the product.

Success increased production; the large pots created to cook fruit and sugar soon gave way to kettles designed by the founders themselves, in order to double production.
Attention to market trends and orientations then led Fratelli Chiaverini to start producing jams and marmalades with organically grown fruit.

Mattei almond biscotti di Prato are born from simple and genuine ingredients. These delicious cantuccini are part of the Tuscan confectionery tradition and are perfect at the end of a meal to accompany a glass of Vinsanto.

Antonio Mattei was a 19th-century Florentine confectioner, famous for creating one of Italy's most renowned biscuits: the Prato biscuit, or cantuccio. In 1858, Antonio inherited the family pastry shop and began experimenting with new recipes, including that of cantucci. These biscuits, made from flour, eggs, sugar, almonds and pine nuts, were baked twice to make them crispy and long-lasting, ideal for storage during long sea voyages. Antonio Mattei's biscuit factory soon became famous regionally and nationally, so much so that in 1895 it was chosen to represent Tuscany at the International Exhibition in Bordeaux. Since 2009, 'i Due Mastri' have been brewing craft beer in the beautiful Prato plain, surrounded by the Apennines and the gentle hills of Carmignano, a stone's throw from wonderful Florence. They strongly believe in a Made in Italy, natural, unfiltered, unpasteurised and bottle-fermented beer. Since 2009 they have started a path that has allowed constant contact with the territory, choosing to use barley malt and hops grown in Italy; for some time now they have been producing the raw materials they need themselves, making the supply chain even shorter and more controlled.

The acidity is present, but well balanced by the tannic richness. The finish is long, with an aftertaste that tends towards sweet liquorice.
A very small and perhaps little-known DOC, but with wines of great quality. On the outskirts of Florence, wine has always been produced at Tenuta Capezzana.

It shows a straw yellow color and nuances of gold. To the nose almond, yellow flowers of the field, vanilla are the most present notes. To the palate it is intense, harmonic with delicate tannins. Elegant, ethereal and balanced, with a complex and persistent aftertaste.
Trebbiano is the novelty and the bet of the company; produced for the first time in 2000 with the aim of relaunching the Trebbiano grape in Tuscany. From a mass selection, a short pruning, a severe green harvest, and a late harvest, Capezzana obtains a very rich must, which ferments and ages in tonneaux, acquires elegant perfumes, and lends itself to long aging. It shows an intense golden yellow color. the scent is very complex, fruity, with hints of dried and candied fruit, apricot and orange peel; floral notes are also present. The palate is complex, sweet, smooth and with a fruity and persistent aftertaste.

Amber beer with the abundant addition of hops with resinous notes. On the palate, the freshness of the hops is balanced by a soft note from the caramel used in combination with the light malt.
I Due Mastri, Beers from Prato
Since 2009, 'i Due Mastri' have been brewing craft beer in the beautiful Prato plain, surrounded by the Apennines and the gentle hills of Carmignano, a stone's throw from wonderful Florence. They strongly believe in a Made in Italy, natural, unfiltered, unpasteurised and bottle-fermented beer. Since 2009 they have started a path that has allowed constant contact with the territory, choosing to use barley malt and hops grown in Italy; for some time now they have been producing the raw materials they need themselves, making the supply chain even shorter and more controlled.

Villa Di Capezzana, Tasting notes:
Elegant, with notes of black cherry and raspberry well blended with the ripe fruit. In the mouth it is soft, enveloping, with soft tannins and good body. The acidity is present, but well balanced by the tannic richness. Long finish, with a sweet liquorice aftertaste.
A very small and perhaps little-known DOC, but with wines of great quality. On the outskirts of Florence, wine has always been produced at Tenuta Capezzana.
