In Attesa DOC, Vinification:
On arrival at the winery, the grapes are destemmed and left almost intact. Alcoholic fermentation takes place in steel tanks at a temperature of 27 °C and maceration lasts about 25/30 days, followed by malolactic fermentation. After about a few months, the wine is filtered and bottled.

La Casa Rossa, Vinification:

It matures in 10hl French oak barrels for about 24 months, after which the wine is blended and bottled.

Castello di Monsanto
There are two places at Castello di Monsanto that capture every visitor for the charm and the magic that is perceived: the Poggio’s hill and the historic cellar. Being able to transmit at least a tenth of the emotions you experience visiting the Monsanto winery is very difficult. The aromas, the echoes, the silences, the layers of noble molds make it a unique place that deserves at least one visit. The company has its origin from here. So from a climb on the Poggio and from a descent into the cellar, the idea of making a Cru in Chianti Classico was born for the first time. It was 1962 when the first 6,000 bottles of the Chianti Classico Riserva Il Poggio were produced. Of the 72 hectares planted with vineyards, between 260 and 310 meters s.l.m., 56 ha are in Sangiovese, the vine in which the company has deeply believed from the beginning. The Sangiovese clones present in the vineyards come from a mass selection of vines found in the vineyard Il Poggio, “the mother” of all the vineyards of Monsanto. In a small percentage are then present the two historical vines of the Chianti Classico vine: Canaiolo and Colorino.

Renzo Marinai's estate is named after the nearby ancient church of San Martino. The estate covers about 33 hectares; just over eight are planted with vines. The terrain is undulating, rising and falling between 350 and 500 metres above sea level. The soil is marly, perfect for Sangiovese, allowing good drainage and the development of deep roots.

Today Riccardo Talenti, respecting tradition, continues the research and continues the work with the same passion and stubbornness as his grandfather. The wines mature well over two years in precious Allier and Slavonian wood. The Le Pupille farm is located in Istia d’Ombrone, a small village on the outskirts of Grosseto;
in 1985 Elisabetta Geppetti, at that time a young girl of 20, took the reins of the winery; thanks to her, in 1982 the winery’s first ‘official’ label came out, a Morellino Riserva vintage 1978. In 1987 it was the turn of Saffredi, the wine that made the excellence of Maremma known far beyond its borders, soon becoming a true jewel of Italian oenology.

Intense ruby red colour, on the nose aromas of myrtle and eucalyptus emerge together with blueberry and blackcurrant berries, dark chocolate and a hint of leather and spices. In the mouth it is warm and soft, with good structure, velvety tannins and a long finish.
Wine from Val di Cornia
A blend of Merlot (50%) and Cabernet Sauvignon (50%) of Val di Cornia where international grape varieties have their highest expression. The result is a full-bodied but elegant wine, complex for its tertiary aromas that derive from the characteristics of the soil rich in clay and minerals.

An impenetrable ruby-red mantle, the elegant and powerful bouquet highlights blackberry and cassis against a background of humus and fern; it then hints at balsamic resins, coffee and cinnamon. It has a remarkable structure with dense tannins. The alcoholic component is properly integrated in the progression thanks to the contribution of a generous sapidity. The finish is persistent and elegant.
Wine from Val di Cornia
Okenio is the commander of the Terradonnà winery, the highest expression of the territory of Suvereto and the Val di Cornia in a pure cabernet sauvignon (100%). They have been producing this wine since 2002 and it has made them known in the world of enology. The high quality obtained with great tenacity and every year is the greatest challenge. Produced with manual selection of the best grapes in the vineyard, slow maceration in vitrified cement vats for 24 days, malolactic fermentation in French oak barriques where it remains for 14 months. Maturation in bottle for 30 months.

Chianti Classico DOCG Gran Selezione La Sala
Chianti Classico Gran Selezione La Sala is a wine that is perfect in combination with red game meat. 100% Sangiovese selected and harvested by hand from a single vineyard of 1.5 hectares. Vinification begins with the use of indigenous yeasts for fermentation, which lasts about two weeks. Maceration for three weeks at controlled temperatures not exceeding 25°C. After that a long aging of 36 months in a single 38hl un-toasted French oak barrel. Bottle aging Minimum 6 months.

La Sala del Torriano has ancient traditions, dating back to 1200, and is located in San Casciano Val di Pesa, right in the heart of Chianti Classico. Intense ruby red with violet hues. The nose is surprising for its intensity, with a bouquet of ripe red berries, violets and elderberries. In the mouth it is enveloping and fresh, harmoniously bringing back to the palate all those typical Sangiovese scents appreciated on the nose. Intense and easy to drink at the same time. The finish is soft and pleasant thanks to mature and delicate tannins, without any sharpness.
Chianti Classico DOCG La Sala:
Chianti Classico La Sala had a strong base of Sangiovese (95%) and a small note of merlot (5%) Destemming and soft crushing. Short maceration, maximum one week, in steel tanks at controlled temperatures not exceeding 25°C. Refinement in the cellar takes place over 15 months, dividing the mass: 50 % in 38 Hl French oak casks, 50 % in small temperature-controlled steel tanks. Finally, it rests in the bottle for at least 6 months
