Aged at least 6 months. It is ideally matched with the great traditional Tuscan reds, even aged ones. A cheese suitable for the preparation of excellent dishes and interesting combinations such as with mushrooms and fish.
Ingredients:
Crust, rather smooth, varying in colour from straw yellow to deep yellow. After treatment with olive oil and ash, it is grey in colour. Paste Hard, ivory white to more or less dark straw yellow in colour. Has slight eye formation, PH5,2/5,5, Storage temperature +4°C/+10°C, Shelf life 12 months, Humidity 32,20%, Fat in dry matter 26,70%, Protein 14,00%, Fresh, 7 days to 44 days shelf-life, Semi-cured 45 days to 6 months ripening, Matured 6 months to 12 months maturation, By Asserbo over 12 months
Fattoria Lischeto
The Lischeto farm, just a few kilometres from volterra, was created by drawing on the experience and traditional knowledge of the family, in a unique landscape and cultural context in Tuscany, a few kilometres from Volterra, one of the best known destinations for the beauty of its historic centre and surrounding hills and increasingly for being the home of the famous Pecorino delle balze volterrane DOP. At the Lischeto farm they adopt the complete organic processing cycle: sowing and harvesting of fodder, selected breeding, which together with the climate, the land and the artisanal production process, make their cheeses unique.
