The Caseificio Fiorino dairy is located in a place of extraordinary charm and historical value, the medieval village of Roccalbegna on the slopes of Mount Amiata. The milk used to produce our cheeses comes exclusively from selected local farms in the neighboring municipalities: Roccalbegna, Saturnia, Semproniano, Scansano, Arcidosso, Cinigiano, Campagnatico, and Grosseto. After internal analysis, a selection is made based on the characteristics of the milk and the type of cheese to be made. The aim is to achieve the highest quality regardless of yield. When tasting their rice, you can taste the flavors of the Maremma. Tenuta San Carlo is a unique place, an out-of-the-ordinary farm. Located in the plain of the Ombrone river, inside the Maremma Park, Tenuta San Carlo is immersed in one of the most natural and unspoiled landscapes of Tuscany. To produce top-quality rice, they listen to the land and respect nature, without wanting to dominate it. From the preparation of the soil, to the selection of the seed up to the timing of the harvest, they follow an ethics of sustainability and pay close attention to details in every phase of the process. “From our land to your table” is the slogan of Tenuta San Carlo, speaking of its rice. All rice is naturally grown and worked in stone to ensure maximum quality. In October 2015, Tenuta San Carlo embarked on the multi-year transition path to certified organic production. In fact, very strict ecological standards are followed in the production of rice and no herbicides, pesticides or fungicides are used. Since 1893 in Strada in Chianti, from father to son, the Fabbri family has been making pasta in the same way, without any changes, in the same square in the center of the village. C'era e Non C'era Val Del Melo, Tasting notes:
A wine with a rich and harmonious bouquet, it presents fruity notes of red berries enveloped by hints of tobacco and chocolate, the taste is fine with a soft and long lasting finish
The grapes are destemmed and left almost entirely intact. Fermentation takes place at a controlled temperature of 27 degrees and maceration lasts about 25/30 days, followed by melolactic fermentation. Ageing takes place in 10hl French oak barrels for approximately 12 months, after which the wine is blended and bottled.
Val Del Melo

The consortium of the Cipolla di Certaldo has a very recent history, in fact, it was founded in 2013, by just 5 farms, to protect the very famous and delicious onion of Certaldo.
Unlike the consortium, the certaldo onion has very ancient origins, it was in fact already mentioned by Boccaccio in the famous Decameron for its taste and extraordinary characteristics.
The producers’ consortium acts as guarantor and guardian for the preservation and continuation of this excellence, also acting as custodian of the onion seeds (in the two varieties Vernina and Statina) and are also registered with the region as such.

The wine is the result of a long maceration with the skins. Fermentation and maceration take place in seven hectoliter terracotta amphorae for at least two months, the yeasts are indigenous. Throughout the vinification process, the wine remains in terracotta amphorae.
