Pastificio Caponi is a historic pasta factory in Montepulciano, Tuscany. Founded in 1953 by Nonna Angelina, the company is now run by the third generation of the Caponi family, who continue to produce artisanal pasta of the highest quality using only top-quality Italian wheat and spring water.

Caseificio Maremma:
Located in the centre of the Tuscan coast, in Follonica, the company established its headquarters in the mid-1960s and since then has focused its dairy production on typical cheeses from the Maremma area that are renowned throughout the world. The factory, located in the industrial area of Follonica, covers an area of approximately 4,000 square metres, which houses the production facilities and the preparation of the finished product before sale. Particular attention is paid to the maturing phase, which has made it necessary to create a suitable environment away from the production site, specifically in Castel del Piano, on Mount Amiata, where the cheese matures naturally in the mountains at an altitude of 700 metres above sea level, creating the perfect balance of flavours typical of these cheeses.

Mieleria Rossi Novaro:
Mieleria Rossi Novaro was founded in the 1960s in Casentino. It was in these mountains that Novaro, the founder, developed a passion for bees and honey production. The settled business soon became nomadic in order to diversify the types of honey produced, searching for the plants and essences loved by bees. The hives were moved partly to Maremma, far from sources of pollution. Thanks to the proximity to the sea and the mild climate, it is possible to produce light-coloured honeys, such as sunflower, clover and sulla. Over the years, Novaro expanded his business and the ever-increasing number of hives convinced him to move permanently to Grosseto, while maintaining a close relationship with his homeland, where he continues to produce forest and chestnut honey. In the workshop at the headquarters, fruit is processed to produce extra jams, compotes to accompany cheese and fruit in syrup, as well as honey-based gastronomic specialities and much more. In keeping with its commitment to the environment, “La Mieleria Rossi Novaro” is self-sufficient in the production of the electricity used in its workshop.

This unique wine combines the solar energy of Sangiovese with the refined finesse of Pinot Noir. The blend reveals an unexpected balance: the depth of Tuscany tempered by the delicacy of Burgundy. The Cantina La Cura, owned by Enrico Corsi, is a young and dynamic production company consisting of fifteen hectares of vineyards in the heart of the denomination Maremma Toscana Doc and Monteregio di Massa Marittima, located in the high Maremma Toscana on the Tyrrhenian coast. The main varieties hosted are Sangiovese, Cabernet Sauvignon, Merlot, and Aleatico for a total annual production of 30 thousand bottles. Trebbiano is the novelty and the bet of the company; produced for the first time in 2000 with the aim of relaunching the Trebbiano grape in Tuscany. Castello di Monsanto
There are two places at Castello di Monsanto that capture every visitor for the charm and the magic that is perceived: the Poggio’s hill and the historic cellar. Being able to transmit at least a tenth of the emotions you experience visiting the Monsanto winery is very difficult. The aromas, the echoes, the silences, the layers of noble molds make it a unique place that deserves at least one visit. The company has its origin from here. So from a climb on the Poggio and from a descent into the cellar, the idea of making a Cru in Chianti Classico was born for the first time. It was 1962 when the first 6,000 bottles of the Chianti Classico Riserva Il Poggio were produced. Of the 72 hectares planted with vineyards, between 260 and 310 meters s.l.m., 56 ha are in Sangiovese, the vine in which the company has deeply believed from the beginning. The Sangiovese clones present in the vineyards come from a mass selection of vines found in the vineyard Il Poggio, “the mother” of all the vineyards of Monsanto. In a small percentage are then present the two historical vines of the Chianti Classico vine: Canaiolo and Colorino.

Scents of ntense fruity, dried apricot and orange zest in evidence, notes of tropical fruits and flowers to complete the bouquet. On the palete has a dense and structured, decidedly pleasant and drinkable, by great wealth and complexity, balanced and very persistent.

From the ansonica grapes of Capel Rosso, bathed in sunlight and squeezed between granite and the sea, comes the Nantropò Passito. These are extreme conditions that only “expert” vines over 80 years old can withstand and produce, even though with minimal quantities, an exceptional wine. The producer, the Fontuccia company, is one of the very few winegrowers on the island of Giglio. Heroic viticulture because their vineyards are small terraces on granite rocks overlooking the sea. The harvest is done by hand, as it was 80 years ago because even the use of tractors is impossible.

Fontuccia dedicated everything to the island life and their passion is infinite, which viticulture today calls “heroic”. Winemaker Gabriele Mazzeschi has eight hectares of vineyards cultivated with Sangiovese, Syrah, Trebbiano and Malvasia, with a small amount of Cabernet Sauvignon and Canaiolo. In addition to producing excellent wines, Gabriele Mazzeschi's Le Capanne winery also grows around 6000 olive trees. The conditions are optimal, gravelly soil in the Tuscan hills at an altitude of 350-450 metres above sea level. Spato IGT Terradonnà, Tasting notes:
Ruby red, on the nose emerge scents of blackberry, raspberry, candied cherry and berry jam, violet, sweet spices, cinnamon, cloves. Strong impact on the palate with soft and well-integrated tannins, excellent persistence.
In Tuscany, the most famous native grape variety in the world is Sangiovese (100%). On the coast, this grape variety adds to its typical aromas the influence of the proximity of the sea that arrives with its breeze to the hills of Suvereto, making the winter season less harsh.

Terradonnà
Terradonnà is located in Suvereto, in the Val di Cornia, a perfect area for wine production. A perfect area for wine production thanks to a soil particularly rich in minerals and a microclimate that, thanks to the recirculation of air from the sea (just a few kilometers away), maintains a mild climate all year round. The philosophy of the company stems from respect for the environment and the rhythms of nature. Firm in their desire to maintain the traditional cellar with cement tanks and wooden presses, they do not renounce innovation in winemaking techniques and research into methods of working to improve the life of the plants. Tradition and innovation coexist in Terradonnà.
Chianti Classico DOCG La Sala, Tasting notes:
Intense ruby red with violet hues. The nose is surprising for its intensity, with a bouquet of ripe red berries, violets and elderberries. In the mouth it is enveloping and fresh, harmoniously bringing back to the palate all those typical Sangiovese scents appreciated on the nose. Intense and easy to drink at the same time. The finish is soft and pleasant thanks to mature and delicate tannins, without any sharpness.
Chianti Classico DOCG La Sala:
Chianti Classico La Sala had a strong base of Sangiovese (95%) and a small note of merlot (5%) Destemming and soft crushing. Short maceration, maximum one week, in steel tanks at controlled temperatures not exceeding 25°C. Refinement in the cellar takes place over 15 months, dividing the mass: 50 % in 38 Hl French oak casks, 50 % in small temperature-controlled steel tanks. Finally, it rests in the bottle for at least 6 months
La Sala
La Sala del Torriano has ancient traditions, dating back to 1200, and is located in San Casciano Val di Pesa, right in the heart of Chianti Classico. Thus was born the project of the new winery, based on the desire to produce organic wines of the highest quality, made with care and dedication in the utmost respect for the environment.

Olio Abbraccio
Olio Abbraccio was born in Seggiano, on the slopes of Monte Amiata, a small medieval village of about 1,000 people, but surrounded by centuries-old olive trees. Seggiano also gives its name to the cultivar, the Olivastra Seggianese, a plant that withstands the low temperatures of Monte Amiata's winters. The antioxidant properties of Abbraccio mean that this oil can be used daily both for cooking and especially for raw seasoning to benefit from all its nutritional properties.
