Passito wine from Maremma
Only 1300 bottles produced each year. In the part of the Maremma known as the Colline Metallifere, Enrico Corsi and his Cantina La Cura produce exceptional, handcrafted wines. For the Passito Predicatore, Merlot grapes are used and in addition to the manual harvest in the vineyard, a second skimming is carried out in the cellar, to guarantee only the best for this wine. We recommend pairing it with dark chocolate or chocolate cantucci to enhance the flavours. Also excellent as a meditation wine.

Rosa Cantine Dei, Tasting notes:
Is characterised by a soft pink colour, its aroma is rich in fresh aromas, especially flowers and fruit, red and soft. Moderate acidity, fresh fruit aromas such as cherry, strawberry, raspberry and orange blossom.
the Rosa Cantine Dei IGT comes from the “Martiena” vineyard, which is located in front of the winery and whose grapes are therefore the first to reach the reception area during the harvest. The grapes destined for Rosa are harvested a couple of weeks earlier than those for Rosso di Montepulciano: when the veraison is complete and the acidity level is still high with good sugar content. The soil, rich in sand and tuff, enhances the wine’s fruity taste, its pleasantness and freshness. After a soft pressing, the must is placed in a refrigerated tank at 6-8°C for 24-36 hours. Fermentation takes place in stainless steel at a controlled temperature of 14°C for 7-10 days.

Nobile di Montepulciano DOCG Riserva Bossona Cantine Dei, Tasting notes:
Complex, elegant and balanced structure. Ruby-coloured tending to garnet, with intense and elegant aromas, with hints of violets, underbrush and spices, it has a character of finesse, with firm, velvety tannins and a long, deep finish.
Vino Nobile Riserva Bossona is one of the highest expressions of the Montepulciano DOCG. Its grapes come from the vineyard of the same name, one of the most suitable, planted by Caterina’s grandfather, Alibrando, in 1961. The wine became a Riserva in 1999, with long ageing in wood and in the bottle. Without a doubt it is one of the estate’s flagship wines, a symbol of the elegance and grace of Sangiovese in Montepulciano. The yields are very low (about 40 quintals per hectare) and the wine is bottled with the label Bossona Riserva only in the best vintages. The soil is of Pliocene origin, dating back 2.5-5 million years. It is rich in tuff, skeleton and fossils, which are not only strongly draining, but also give the wine structure and minerality. The Bossona vineyard is one of the sunniest areas of Montepulciano and its favourable exposure allows for excellent ripening of the grapes. The complex composition of the soil is perfect for Sangiovese, and the constant ventilation ensures that the grapes are healthy.

Nobile di Montepulciano
Vino Nobile di Montepulciano Cantine Dei is one of the most prestigious Italian wines, the first to be awarded the DOCG and it is the perfect example of the expression that Sangiovese takes in the Montepulciano lands. It is mostly Sangiovese, with small quantities of complementary varieties (5%). Grows in a predominantly clayey soil with the presence of sand (tuff), which gives it an intense colour, a full body and the ability to age. The vinification technique consists of soft pressing, fermentation in stainless steel at a controlled temperature of 26-28°C and maceration on the skins for 15-20 days with pumping over. Finally, it is aged for a minimum of 24 months, of which at least 18 months in 50 hl Slavonian oak casks.

The wine has a lively ruby red colour, a fruity and very fresh bouquet. The tannins are of excellent quality, which makes it an excellent wine from a young age, even if its potential is still evident after many years.

Rosso di Montepulciano
Rosso di Montepulciano Cantine Dei young wine full of surprises and character, a fresh and lively declination of the Sangiovese vineyards. This is Cantine Dei’s Rosso di Montepulciano, lively, full-bodied and sapid. Grows on tufaceous soil with the presence of sedimentary rock, brings out the fruity taste of the wine, and makes Sangiovese very pleasant even when young. After soft pressing, fermentation takes place in stainless steel at a controlled temperature. Maceration on the skins lasts for 10-14 days, with continuous pumping over.

Intense and deep ruby red colour. It has a broad and fascinating nose. Varietal notes dominate, with ripe red fruit and jams, all accompanied by the spicy scent of wood, which remains in the background. The olfactory-gustatory link is perfect. In the mouth it is ethereal, long and mineral, the tannins are well made, dense and elegant. A deeper analysis reveals a medium alcohol content and excellent levels of acidity and extractive substances. A wine that stands out above all for its elegance and refinement.

Caterina Dei, the owner, considers this wine to be the jewel in the crown of the entire production, which is why he has decided to dedicate it to his father Glauco: at the bottom of the label, we read “to my father”, a fitting tribute to the figure who was the reference point for the growth of the company. A complex, fragrant wine, rich in aromas of black fruit, such as blueberry and blackberry jam. It is balsamic and floral, well balanced with some spicy hints of tobacco, vanilla and black pepper. Full-bodied, with velvety, compact tannins and long ageing potential.

Production, initially a few thousand bottles, later increased with the planting of new vineyards. Rosso di Montalcino DOC Capanna is a classic 100% Sangiovese wine from Montalcino. Goes perfectly with pasta with meat sauce, roast white and red meat, mushrooms, cold meats and cheeses. Vinification takes place with alcoholic fermentation with maceration of the skins (18-20 days) at controlled temperature and spontaneous malolactic fermentation, both in truncated conical Slavonian oak vats. Refinement in Slavonian oak barrels from 20 to 32 hl for 6-10 months; followed by refinement in the bottle for at least 3-4 months.

Very intense, almost impenetrable ruby red. Broad, complex, elegant, fine, sweet, fruity with intense spicy notes. Soft, structured, great volume, with dense and sweet tannins, acidity in balance with the structure. Long, persistent, fruity aftertaste with taste sensations of small red berries from the undergrowth married to intense and complex spicy notes.
This wine was born from an idea of Ugo Contini Bonacossi in 1979 with the intention of producing, in Carmignano, a wine with Bordeaux grapes.

Trebbiano IGT Capezzana, Tasting notes:
It shows a straw yellow color and nuances of gold. To the nose almond, yellow flowers of the field, vanilla are the most present notes. To the palate it is intense, harmonic with delicate tannins. Elegant, ethereal and balanced, with a complex and persistent aftertaste.
Trebbiano is the novelty and the bet of the company; produced for the first time in 2000 with the aim of relaunching the Trebbiano grape in Tuscany. From a mass selection, a short pruning, a severe green harvest, and a late harvest, Capezzana obtains a very rich must, which ferments and ages in tonneaux, acquires elegant perfumes, and lends itself to long aging. Fruity, floral, broad and clean, soft on the palate, harmonious balance between freshness and intensity. Long fruity aftertaste
Vinruspo comes from a blend of sangiovese 75% cabernet 20% canaiolo nero 5%. It is excellent as an introductory wine, accompanied by first courses in general and also with white meats.

It shows an intense golden yellow color. the scent is very complex, fruity, with hints of dried and candied fruit, apricot and orange peel; floral notes are also present. The palate is complex, sweet, smooth and with a fruity and persistent aftertaste.

Brunello di Montalcino Caprili, Tasting notes:
Soft and less tannic than the Riserva, the Brunello has an intense colour, ample aromas with notes of red berries. On the palate it gives a well-balanced body with well-blended tannins in the structure, which ensures elegance and longevity.
Sangiovese from Montalcino
Tuscany is the home of red wine, particularly sangiovese.
Sangiovese grosso has found in montalcino a special terroir that, combined with the experience of the winegrowers, has created a legendary product famous throughout the world for its qualities.
Caprili
Caprili estate was founded in 1965 by Alfo Bartolomei and the first bottle of Brunello di Montalcino Caprili is the 1978 vintage, introduced on the market in 1983. The vineyards are raised by spurred cordon, they are at an altitude ranging from 225 to 340 m above sea level. The southwest exposure of the company, which looks towards the sea, enjoys the mitigating action of the winds that avoid stagnant humidity that can cause fungal attacks on the vineyards. Therefore the only interventions are based on contact substances such as copper and sulfur. The vinification follows the natural processes favoring the use of native yeasts, contained in the grapes themselves, this gives the wine its own precise territorial identity, easily recognizable and traceable. But at the same time never homologated in taste and perfumes, rather than following the changeability of the seasonal trend of the vintages, and expressing their particularity. The Caprili company covers an area of 58 hectares, southwest of the territory in the municipality of Montalcino, on the slope of the hill that slopes towards the Orcia and Ombrone rivers. The vineyard area is 15.5 hectares of which 14.5 are grown in Sangiovese Grosso from which Brunello di Montalcino DOCG and Rosso di Montalcino DOC

The Caseificio Fiorino dairy is located in a place of extraordinary charm and historical value, the medieval village of Roccalbegna on the slopes of Mount Amiata. The milk used to produce our cheeses comes exclusively from selected local farms in the neighboring municipalities: Roccalbegna, Saturnia, Semproniano, Scansano, Arcidosso, Cinigiano, Campagnatico, and Grosseto. After internal analysis, a selection is made based on the characteristics of the milk and the type of cheese to be made. The aim is to achieve the highest quality regardless of yield. Each processing step is carried out by hand by experienced cheesemakers. In fact, their Pecorino Toscano cheeses are awarded every year in the most important global competitions.

During the maturing phase, this cheese is treated on the surface with a mixture of extra virgin olive oil, vinegar and flour.
