Simone Fabrizzi
The Fabrizzi Simone lab is located in the beautiful village of Pienza, in the heart of the Val d’Orcia. The company was born thanks to Fabrizzi Guerrino’s passion for truffle hunting who, since the 1960s, used to collect the precious tubers with his dog. As often happens, this passion was passed down to his son who, growing up, started hunting truffles with his father. The aim of the company is to make people enjoy truffles all year round, creating genuine and fantastic products.

Caseificio Il Fiorino
The Caseificio Fiorino dairy is located in a place of extraordinary charm and historical value, the medieval village of Roccalbegna on the slopes of Mount Amiata. The milk used to produce our cheeses comes exclusively from selected local farms in the neighboring municipalities: Roccalbegna, Saturnia, Semproniano, Scansano, Arcidosso, Cinigiano, Campagnatico, and Grosseto. After internal analysis, a selection is made based on the characteristics of the milk and the type of cheese to be made. The aim is to achieve the highest quality regardless of yield. Each processing step is carried out by hand by experienced cheesemakers. In fact, their Pecorino Toscano cheeses are awarded every year in the most important global competitions.

The Frateria San benedetto stands in the Sienese countryside linking Montepulciano to Chianciano Terme; it has ancient origins, it was used by the Romans as a ‘rest-home’ during long journeys. Today it has been completely restructured and has undergone innovations that have ensured a good development of the farm itself; in addition to having its own agriturismo, the farm is mainly involved in the organic cultivation of fruit trees, in particular the local wild plum, known as ‘la Coscia Di Monaca’ throughout Tuscany and beyond. Mieleria Rossi Novaro:
Mieleria Rossi Novaro was founded in the 1960s in Casentino. It was in these mountains that Novaro, the founder, developed a passion for bees and honey production. The settled business soon became nomadic in order to diversify the types of honey produced, searching for the plants and essences loved by bees. The hives were moved partly to Maremma, far from sources of pollution. Thanks to the proximity to the sea and the mild climate, it is possible to produce light-coloured honeys, such as sunflower, clover and sulla. Over the years, Novaro expanded his business and the ever-increasing number of hives convinced him to move permanently to Grosseto, while maintaining a close relationship with his homeland, where he continues to produce forest and chestnut honey. In the workshop at the headquarters, fruit is processed to produce extra jams, compotes to accompany cheese and fruit in syrup, as well as honey-based gastronomic specialities and much more. In keeping with its commitment to the environment, “La Mieleria Rossi Novaro” is self-sufficient in the production of the electricity used in its workshop.

Some essential phases of the production cycle are still carried out completely by hand, such as dry salting, turning and crust treatments of the various products. The most innovative technologies have taken over in the renewal of the washing phases, in the pasteurization of the milk and in the sterilization of the environments with the use of avant-garde instruments, to the benefit of the quality of the final product without renouncing the artisan workmanship that has always distinguished the Seggiano dairy. The raw materials and craftsmanship of the dairy make their cheeses unique and inimitable, all produced with milk from the area.

Orange Marmalades with Peels Chiaverini
Harvested by hand , choosing only the highest quality orange to obtain an excellent finished product
Chiaverini
In 1928, the young Chiaverini brothers decided to open a small company for the production of jams and preserves, just outside the walls of Florence.
After a few years, the Chiaverini brothers' jams were not only in demand in grocery shops: 5 kg jars were introduced to meet the demands of pastry shops as well. Success increased production; the large pots created to cook fruit and sugar soon gave way to kettles designed by the founders themselves, in order to double production.
Attention to market trends and orientations then led Fratelli Chiaverini to start producing jams and marmalades with organically grown fruit.

Antonio Mattei
Antonio Mattei was a 19th-century Florentine confectioner, famous for creating one of Italy's most renowned biscuits: the Prato biscuit, or cantuccio. In 1858, Antonio inherited the family pastry shop and began experimenting with new recipes, including that of cantucci. These biscuits, made from flour, eggs, sugar, almonds and pine nuts, were baked twice to make them crispy and long-lasting, ideal for storage during long sea voyages. Antonio Mattei's biscuit factory soon became famous regionally and nationally, so much so that in 1895 it was chosen to represent Tuscany at the International Exhibition in Bordeaux. Since then, the Prato biscuit has become a symbol of Tuscan cuisine and one of the best-loved sweets in Italy and abroad.

Azienda Agricola Il Bottaccio:
Azienda Agricola Il Bottaccio was established in 1925 in one of the most beautiful and typical Tuscan landscapes, an expanse of olive trees that represents all the Tuscan tradition in its splendour.
The company has grown over the years, continuing to follow the ancient traditions of the area and bringing its production, mainly of extra virgin olive oil, to a sublime quality. Today, thanks to the passion for cultivation, harvesting and production handed down from one generation to the next, Il Bottaccio looks to the development of modern organic olive growing, in the name of the continuity of an activity that respects the territory and the quality of Tuscan traditions.
