Bianca come il marmo che ne culla la stagionatura, profumata di spezie, delicata e dolce al palato. Un tempo, veniva preparata battendo il Lardo nel mortaio di marmo bianco dei Canaloni di Colonnata, e utilizzata come condimento base.
