The producer, Antica Norcineria, master butchers for four generations. Their story began in the post-war period on the slopes of the Apuan Alps, in the Serchio Valley where the large chestnut forests and terraces sown with spelt bear witness to an ancient rural tradition that is still preserved today. In the beginning, the production and marketing of typical products such as lard, sausage and soppressata was a source of pride for the Antica Norcineria, which became a reference brand for all the genuine products of the Media Valle, Garfagnana and surrounding areas. Today, thanks to them, the peasant memory handed down by their ancestors is handed down and the culture of eating healthy and well is spread. A red wine that comes from the union of the ciliegiolo, grenache and carignano varieties,the grapes have separate vinifications and different origins,it ferments in steel spontaneously with maceration on the skins for 10 days, it is refined in cement.
Antonio Camillo:
Antonio Camillo’s wine cellar is located not far from Capalbio with vineyards extending over about nine hectares. They are mainly composed of old vines, between 40 and 50 years old. The varieties cultivated are obviously Ciliegiolo, with a small percentage destined for Vermentino and Sangiovese. Traditional working methods are followed between the rows, favouring manual operations and limiting interventions for health defence, using exclusively natural products such as copper and sulphur. Even in the cellar, the working method is oriented towards accompanying the wine in its natural course, trying to intervene as little as possible, without forcing the result of the harvest in any way. Conserveria Tonnina
The conserveria tonnina takes its name from a specific processing of a part of the tuna fish typical of the island of Elba. The shop is located near the historic cove in Portoferraio, in front of the fishermen’s boats. Here, traditional recipes with the original flavour of the ancient Elban tradition are prepared and preserved, faithfully following the methods, customs and recipes of seafaring custom. One of the values that the Conserveria Tonnina boasts is the quality of the fish products, all caught in the sea adjacent to Elba and in Italy. The products are diverse and undergo specific processing, the most commonly used fish being tuna, anchovies, skipjack and mackerel. The products are rich in omega 3 and protein, and the processing and preservation contribute to maintaining the flavour without altering it.

Built in the mid-19th century by the Grand Duke of Tuscany, it boasts one of the highest expressions of the biodiversity of the Mediterranean maquis, comprising more than 500 hectares of land divided between vineyards, olive groves, hillsides and woods.The Acquagiusta vineyards cover 30 hectares of the estate and are divided into two vineyards. They have been positioned by carefully studying the exposure of the plants to the various elements in order to recreate the best conditions for their adaptation and to make the most of each natural element.
