Sergio Falaschi is a piece of history in the small village of San Miniato. Butchers since 1925, the Falaschi family contributed to the pork butchering tradition of Tuscany and are still today ambassadors and guardians of ancient Tuscan traditions. Unlike the consortium, the certaldo onion has very ancient origins, it was in fact already mentioned by Boccaccio in the famous Decameron for its taste and extraordinary characteristics.
The producers’ consortium acts as guarantor and guardian for the preservation and continuation of this excellence, also acting as custodian of the onion seeds (in the two varieties Vernina and Statina) and are also registered with the region as such.

At Pasta Fabbri, they still respect traditional pasta-making techniques: drying is ‘very slow’ (from 72 to 144 hours depending on the format), temperatures are strictly below 38°C and the pasta is drawn ‘al bronzo’, i.e. with the help of original bronze dies from the 1950s.

Unlike the consortium, the certaldo onion has very ancient origins, it was in fact already mentioned by Boccaccio in the famous Decameron for its taste and extraordinary characteristics.
The producers’ consortium acts as guarantor and guardian for the preservation and continuation of this excellence, also acting as custodian of the onion seeds (in the two varieties Vernina and Statina) and are also registered with the region as such.
