Tradition and quality
The production of Tuscan pecorino follows a centuries-old tradition and places high demands on the quality of the ingredients used. This starts with the milk: only sheep's milk from Tuscany is used to make the cheese;
The milk is boiled and rennet is added to start the curdling process. Once cooled, the curd is pressed into moulds and stretched before maturing for at least 20 days in cellars with controlled temperature and humidity.
Protected Designation of Origin (DOP)
Pecorino Toscano is so deeply rooted in the history and culture of Tuscany that it has been a protected designation of origin (PDO). This means that every cheese bearing the name Pecorino Toscano must fulfil certain quality standards and must be produced exclusively in Tuscany. Each of these cheeses offers a slice of the Tuscan way of life and is a testament to the region's artisanal and culinary tradition.
