The grapes are destemmed and fermented all together. Fermentation of the must takes place in cement vats for 2-3 weeks. The must is then transferred to steel vats to complete malolactic fermentation. After a couple of months, when the must has been clarified and decanted, half is transferred to steel vats, while the other half matures for 12 months in second-passage oak barrels.
Campocorto
Campocorto is a small family-run farm, located in the heart of the Chianti Classico region and has a production of around 2500 bottles per year. The small production together with the passion for the land allow the family to take care of the land, taking care of everything down to the smallest detail with love. Every stage, from cultivation to working the land, to the harvest, the maturation and refinement of the wine, are followed with the utmost care

Castello di Monsanto
There are two places at Castello di Monsanto that capture every visitor for the charm and the magic that is perceived: the Poggio’s hill and the historic cellar. Being able to transmit at least a tenth of the emotions you experience visiting the Monsanto winery is very difficult. The aromas, the echoes, the silences, the layers of noble molds make it a unique place that deserves at least one visit. The company has its origin from here. So from a climb on the Poggio and from a descent into the cellar, the idea of making a Cru in Chianti Classico was born for the first time. It was 1962 when the first 6,000 bottles of the Chianti Classico Riserva Il Poggio were produced. Of the 72 hectares planted with vineyards, between 260 and 310 meters s.l.m., 56 ha are in Sangiovese, the vine in which the company has deeply believed from the beginning. The Sangiovese clones present in the vineyards come from a mass selection of vines found in the vineyard Il Poggio, “the mother” of all the vineyards of Monsanto. In a small percentage are then present the two historical vines of the Chianti Classico vine: Canaiolo and Colorino.

GR 1 5652 IGT Toscana Rosso Il Pingro:
Il Pingro
IL PINGRO is a young business run by Chiara and Margherita: two cousins determined to breathe new life into the old family vineyards. Only 1 km from the sea, in the province of Grosseto, our vines grow on sandy and mineral soils, shaken by the gusts of the Mistral: that is why our wine tastes of the sea. Produced by four hands along the coast of the Tuscan Maremma, GR1 5652 is made from native Ansonica and Procanico grapes. The end result reflects us and our land. Our philosophy is based on healthy and respectful agriculture: every step of the process is done by hand. What we offer is a simple wine, but made with care. Inspired by the taste of the farmer's wine. IL PINGRO comes from 'il Pingrosso', the name of the place where we are located. In the middle of the field is a large maritime pine tree that our great-grandfather planted to find some shade on hot summer days. This pine tree, which grew solitary, became a 'big pine tree' in width, hence the name Pingrosso. Shortened to Pingro, for simplicity's sake. Today that pine has become our symbol, impossible not to notice.

Harvesting takes place when the grapes are fully ripe, fermentation is carried out exclusively with natural yeasts in cement tanks, the cap is submerged manually for the duration of fermentation, which lasts approximately 2 weeks for each variety. After racking and spontaneous malolactic fermentation, the wines are normally blended before the end of the year, after which they are aged for a year in unglazed cement vats. After the appropriate filtrations, it is bottled and rests for at least 6 months in the bottle
Fabio Motta:
Fabio Motta’s company started out with a small plot of land comprising 4 hectares of vines about 20 years old and then grew to about 7 hectares. The company’s small size allows the producer to personally follow every aspect step by step from cultivation to vinification, guaranteeing a process that is taken care of down to the smallest detail. The Bolgheri area overlooking the sea presents incredible qualities for viticulture, a perfect balance of climate and environment combined with Fabio’s passion and dedication reflects the perfection of this land in the wines

This wine has an intense, dark and dense ruby red colour. The nose offers fruity notes of blackberries, blueberries and sour cherries together with fragrant hints of cloves and vanilla. Its bouquet is complemented by light notes of tobacco. The palate is rich and captivating: velvety tannins support a long, lingering finish defined by hints of bitter chocolate and mint.
Vie Cave Fattoria Aldobrandesca, Vinification:
The freshly harvested grapes were brought to the cellar, destemmed, gently pressed and transferred to stainless steel tanks. The first stage was pre-fermentation cold maceration performed by lowering the temperature to 5-10 °C (41-50 °F) for 3 to 4 days in order to extract aromatic compounds and anthocyanins from the skins. The must temperature was then gradually increased to allow alcoholic fermentation at a controlled temperature of 30 °C (86 °F). The maceration techniques were carried out gently for the controlled extraction of soft tannins over a period of about one week. The wine was transferred to French oak barrels to complete malolactic fermentation and begin ageing for approximately 10 months. The Fattoria Aldobrandesca estate is located in the southern part of Tuscan Maremma, in the center of what is known as “the Etruscan Tuff zone”.Maremma is often associated with its coastline, flat lands, pine tree forests, horses and local cowboys called “butteri”. The Fattoria Aldobrandesca estate is in rural Maremma located inland in an area known as the Tuff Area. Ancient civilizations built fascinating medieval fortresses and settlements on steep tuff bluffs that today are open-air museums. Small characteristic towns carved out of tuff stone in this area are Pitigliano, Sorano and Sovana. The vineyards rise on the slopes of a spur of tuff where the hilltop town of Sovana is located, surrounded by a beautiful landscape of incredible natural beauty, rich in architectural heritage

Ruby in colour, very consistent. The nose reveals notes of small red fruits, cedar and black pepper. The taste is concentrated and soft, very long but not heavy. *
Ombra Blu
The grapes are harvested and selected by hand and vinified separately. Fermentation takes place without the addition of yeast and lasts, including maceration, between 25 and 30 days. The wines mature for 12 months partly in barriques and partly in steel. Subsequently blended and bottled, the wine is aged for a minimum of 6 months in the bottle.
Sassotondo
The producer, Sassotondo, works with passion in the lands that unite Pitigliano and Sovana. A powerful and mysterious territory: the autochthonous vines and an environment which is in some ways extreme – with tuff rising everywhere – produce fine and elegant wines, naturally concentrated, sapid and spicy. Sassotondo’s wines endeavor to communicate the power and mistery of the land they come from: the local varieties of vines combined with an unique environment, with the tufo stone that appears everywhere, make wines that are fine and elegant, naturally concentrated, sapid and spicy.

A red of grace and intensity, joyful and easy to drink, it does not renounce matter and complexity.
Bolgheri Rosso Le Macchiole
Bottled for the first time with the 2004 vintage, this wine is the purest and most direct expression of Bolgheri according to Le Macchiole.
Le Macchiole
Founded in the early 1980s, Le Macchiole is one of the historical realities of Bolgheri, and has become over time an absolute reference point for quality Tuscan wine. The project was realised thanks to Eugenio Campolmi and Cinzia Merli, among the pioneers of the area, through their original vision of a vocated territory still at the dawn of its stylistic definition. It was their action, both in the vineyard and in the cellar, with the creation of wines that have become symbolic for their character and personality, that contributed to Bolgheri’s fame. Le Macchiole proves to be a constantly evolving reality thanks to a contemporary interpretation of wine and its terroir. The choice of organic and sustainable agriculture together with its authenticity demonstrates how this winery manages to have a historic yet innovative face, making it a protagonist of both the past and present of its land

Il Bruciato 2021 is intensely ruby red in color. The nose offers notes of small ripe red fruit, sweet spices, and tobacco. The palate has excellent structure, is remarkably mouth filling with a pleasant fruity aftertaste that imparts good persistence and easy drinkability.
Il Bruciato Bolgheri DOC:
Upon arrival in the cellar, selected clusters were destemmed and gently crushed. Fermentation and maceration on the skins took place in temperature controlled stainless steel tanks for approximately 10 to 15 days at a temperature of 28-30 °C (82-86 °F). A portion of the Merlot and Syrah musts were kept at lower temperatures during fermentation to better preserve each grape variety’s distinctive aromas. Malolactic fermentation took place both in barriques and in stainless steel tanks and was completed by the end of the year for all grape varieties. Subsequently, Cabernet Sauvignon was blended with Merlot, Syrah, and a small percentage of Cabernet Franc and Petit Verdot: the blend was reintroduced into barriques where it was left to age before bottling.
Guado al Tasso:
Tenuta Guado al Tasso is located in the small but prestigious DOC Bolgheri, in the upper Maremma, about one hundred kilometres south-west of Florence. The estate covers an area planted with vines of about 320 hectares, immersed in a splendid plain surrounded by gentle hills, known as the ‘Amphitheatre of Bolgheri’ for its particular conformation. The noble Della Gherardesca family began practising viticulture in the late 1600s on their land in Bolgheri, but things really began to change under Guido Alberto Della Gherardesca (1780-1854). He was passionate about viticulture. He was appointed majordomo to Grand Duke Leopold II and then devoted himself to oenology on the family estates in Maremma. The vineyards are planted with Cabernet Sauvignon, Merlot, Syrah, Cabernet Franc, Petit Verdot and Vermentino; the latter is cultivated with both white and red varieties. The proximity to the sea offers a mild climate, with constant breezes that mitigate the summer heat and alleviate the harsh winter climate. The alluvial soils of the area, varying from sandy-clayey to silty-clayey rich in Bolgheri agglomerate (fine gravel), influence the character and personality of the varieties grown and give them a distinctive territorial identity
