The farm Il Quercetano was founded in 2020 with the idea of safeguarding the olive biodiversity of the production area and with the aim of producing a superior quality extra virgin olive oil rich in flavors and fragrances. The company’s logic is based on the recovery of the Quercetano olive groves, which are now abandoned, restoring value to the landscape. Their oil is produced in the hinterland of Versilia, an ancient landscape protected by the Apuan Alps and caressed by the tramontana wind and sea breezes. The conserveria tonnina takes its name from a specific processing of a part of the tuna fish typical of the island of Elba. The shop is located near the historic cove in Portoferraio, in front of the fishermen’s boats. Here, traditional recipes with the original flavour of the ancient Elban tradition are prepared and preserved, faithfully following the methods, customs and recipes of seafaring custom. One of the values that the Conserveria Tonnina boasts is the quality of the fish products, all caught in the sea adjacent to Elba and in Italy. The products are diverse and undergo specific processing, the most commonly used fish being tuna, anchovies, skipjack and mackerel. The products are rich in omega 3 and protein, and the processing and preservation contribute to maintaining the flavour without altering it.

Caseificio Il Fiorino
The Caseificio Fiorino dairy is located in a place of extraordinary charm and historical value, the medieval village of Roccalbegna on the slopes of Mount Amiata. The milk used to produce our cheeses comes exclusively from selected local farms in the neighboring municipalities: Roccalbegna, Saturnia, Semproniano, Scansano, Arcidosso, Cinigiano, Campagnatico, and Grosseto. After internal analysis, a selection is made based on the characteristics of the milk and the type of cheese to be made. The aim is to achieve the highest quality regardless of yield. Each processing step is carried out by hand by experienced cheesemakers. In fact, their Pecorino Toscano cheeses are awarded every year in the most important global competitions.

Intense and deep ruby red colour. It has a broad and fascinating nose. Varietal notes dominate, with ripe red fruit and jams, all accompanied by the spicy scent of wood, which remains in the background. The olfactory-gustatory link is perfect. In the mouth it is ethereal, long and mineral, the tannins are well made, dense and elegant. A deeper analysis reveals a medium alcohol content and excellent levels of acidity and extractive substances. A wine that stands out above all for its elegance and refinement.

Cantine Dei is known as one of the best wine producers of Montepulciano. Every year their wines are awarded and recognized by critics as excellent.
At the Dei estate, arts merges with wine. Their cellar is the perfect example of how architecture and winemaking are working together for a stunning result.

Cantina La Cura
The Cantina La Cura, owned by Enrico Corsi, is a young and dynamic production company consisting of fifteen hectares of vineyards in the heart of the denomination Maremma Toscana Doc and Monteregio di Massa Marittima, located in the high Maremma Toscana on the Tyrrhenian coast. The main varieties hosted are Sangiovese, Cabernet Sauvignon, Merlot, and Aleatico for a total annual production of 30 thousand bottles. The company favors an ecological approach to the processing of soil and vines, coordinated by the University of Pisa, which is also its main technical partner. The first bottles of wine date back to 1999.
Passito wine from Maremma
Only 1300 bottles produced each year. In the part of the Maremma known as the Colline Metallifere, Enrico Corsi and his Cantina La Cura produce exceptional, handcrafted wines. For the Passito Predicatore, Merlot grapes are used and in addition to the manual harvest in the vineyard, a second skimming is carried out in the cellar, to guarantee only the best for this wine. We recommend pairing it with dark chocolate or chocolate cantucci to enhance the flavours. Also excellent as a meditation wine.

How to use the Biroldo della Garfagnana:
The processing of Biroldo is guaranteed by the Slow Food regulations, which require that the pig’s head, heart, tongue, rind and lung are cooked in a cauldron for about three hours. After boning the head, all the boiled meat is cut into small pieces and mixed with squares of lard, blood, salt, pepper, cinnamon, nutmeg, coriander and cloves. The sausage is manually stuffed into the bladder or stomach (buzzetto) of the pig, which is then sewn up and boiled for another three hours in the broth in which the meat was previously cooked. The Biroldo is then placed on a shelf and left to cool in the air to facilitate draining and fat loss. The sausage is naturally free of preservatives, colour stabilisers and thickeners and the local people used to eat it cold, cut with a knife and accompanied by the typical local potato bread or polenta di neccio made with chestnut flour.
