Bianco di Pitigliano DOC Vinification:
Before being pressed, the grapes are placed overnight in cold storage in order to have a greater extraction of aromas and to avoid oxidation. Soft pressing is then carried out. The grapes are then decanted for 36-48 hours. Fermentation takes place in white, without skin contact, in stainless steel at a controlled temperature of 16°C. Vegan wine. All energy used during the production process comes from renewable sources.
Tenuta Montauto

How to use the Biroldo della Garfagnana:
The processing of Biroldo is guaranteed by the Slow Food regulations, which require that the pig’s head, heart, tongue, rind and lung are cooked in a cauldron for about three hours. After boning the head, all the boiled meat is cut into small pieces and mixed with squares of lard, blood, salt, pepper, cinnamon, nutmeg, coriander and cloves. The sausage is manually stuffed into the bladder or stomach (buzzetto) of the pig, which is then sewn up and boiled for another three hours in the broth in which the meat was previously cooked. The Biroldo is then placed on a shelf and left to cool in the air to facilitate draining and fat loss. The sausage is naturally free of preservatives, colour stabilisers and thickeners and the local people used to eat it cold, cut with a knife and accompanied by the typical local potato bread or polenta di neccio made with chestnut flour.

The producer, Antica Norcineria, master butchers for four generations. Their story began in the post-war period on the slopes of the Apuan Alps, in the Serchio Valley where the large chestnut forests and terraces sown with spelt bear witness to an ancient rural tradition that is still preserved today. In the beginning, the production and marketing of typical products such as lard, sausage and soppressata was a source of pride for the Antica Norcineria, which became a reference brand for all the genuine products of the Media Valle, Garfagnana and surrounding areas. Today, thanks to them, the peasant memory handed down by their ancestors is handed down and the culture of eating healthy and well is spread. The Rustici farm was established in the late 1950s from the 10 hectares of grandfather Giuseppe’s farm located in the Maremma region of Grosseto. At the end of the 1970s, the first selected Friesian dairy mares were introduced, from the best Italian breeding farms, which have always been cared for using innovative breeding techniques that respect the animals’ wellbeing and diet, thus beginning the production of alimentary milk. In 1996, the farm began the direct sale of beef. In the early 2000s, Giuseppe and Andrea took over the business from their father, adding a further 32 hectares of land. From this date, the company embarked on a path of organic farming, taking advantage of BIOAGRICERT certification. At the same time, the vineyard and olive grove are planted, followed by the transformation of milk into dairy products.

There are no passages in wood, so vinification and ageing take place only in steel. The result is an intense, compact ruby red wine with fresh, ethereal aromas and notes of small red fruits, violets and roses. On tasting, the wine is fresh and appealing, ready and easy to drink. The taste-olfactory balance is excellent and the finely mineral finish is pleasant.

Bolgheri Rosso Pievi Fabio Motta:
Harvesting takes place when the grapes are fully ripe, fermentation is carried out exclusively with natural yeasts in cement tanks, the cap is submerged manually for the duration of fermentation, which lasts approximately 2 weeks for each variety. After racking and spontaneous malolactic fermentation, the wines are normally blended before the end of the year, after which they are aged for a year in unglazed cement vats. After the appropriate filtrations, it is bottled and rests for at least 6 months in the bottle

Fabio Motta’s company started out with a small plot of land comprising 4 hectares of vines about 20 years old and then grew to about 7 hectares. The company’s small size allows the producer to personally follow every aspect step by step from cultivation to vinification, guaranteeing a process that is taken care of down to the smallest detail. The Bolgheri area overlooking the sea presents incredible qualities for viticulture, a perfect balance of climate and environment combined with Fabio’s passion and dedication reflects the perfection of this land in the wines
