This is a semi-cured chalky sheep's milk cheese that is matured and then ripened on a bed of natural straw. Maturation under straw gives the cheese, especially in the parts closest to the rind, very intense herbaceous notes and is particularly tasty on the palate

INGREDIENTS: *Pasteurised sheep's milk, rennet, salt, milk enzymes. NON-EDIBLE RIND. Store in a cool, dry place.
