The special treatment of the rind was done to prevent moulds from finding fertile ground for their development and thus safeguard the wholesomeness of the product. Aroma: Intense, milky, fresh herbaceous Taste: Sweet and delicate flavor, balanced taste, slightly bitter at the end
Ingredients:
Ingredients: 100% organic raw whole sheep’s milk, Cow’s milk enzymes Animal rennet, Salt. Height of the cantilever: approx. 6/8 cm, Diameter of faces: approx. 14 cm, Rind: porous, light yellow in colour and after treatment with organic tomato paste and light red extra virgin olive oil not homogeneous, Paste: semi-hard, light yellow in colour, regular medium-sized eyes, pH: 5.2/5.5, Storage temperature: +4°C/+10°C, Moisture content: 42.80%, Fat on dry matter: 26.90%, Protein (Nx6.25): 18.10%, Maturation: 60 days minimum

The Lischeto farm, just a few kilometres from volterra, was created by drawing on the experience and traditional knowledge of the family, in a unique landscape and cultural context in Tuscany, a few kilometres from Volterra, one of the best known destinations for the beauty of its historic centre and surrounding hills and increasingly for being the home of the famous Pecorino delle balze volterrane DOP. At the Lischeto farm they adopt the complete organic processing cycle: sowing and harvesting of fodder, selected breeding, which together with the climate, the land and the artisanal production process, make their cheeses unique.
The traditional pecorino cheeses are the famous Pecorino delle Balze volterrane DOP and the Pecorino Rosso di Volterra, both of which can be purchased online on our website.
