A deep ruby-coloured wine, the nose has a dense and intense texture of floral and spicy scents, bergamot zest, black pepper, leather, lots of red and black berry fruit and an enveloping finish with balsamic notes of mint and eucalyptus. The palate offers the same aromatic complexity, enhanced by a pleasant minerality and dense, soft, ripe tannins.

Castello di Monsanto
There are two places at Castello di Monsanto that capture every visitor for the charm and the magic that is perceived: the Poggio’s hill and the historic cellar. Being able to transmit at least a tenth of the emotions you experience visiting the Monsanto winery is very difficult. The aromas, the echoes, the silences, the layers of noble molds make it a unique place that deserves at least one visit. The company has its origin from here. So from a climb on the Poggio and from a descent into the cellar, the idea of making a Cru in Chianti Classico was born for the first time. It was 1962 when the first 6,000 bottles of the Chianti Classico Riserva Il Poggio were produced. Of the 72 hectares planted with vineyards, between 260 and 310 meters s.l.m., 56 ha are in Sangiovese, the vine in which the company has deeply believed from the beginning. The Sangiovese clones present in the vineyards come from a mass selection of vines found in the vineyard Il Poggio, “the mother” of all the vineyards of Monsanto. In a small percentage are then present the two historical vines of the Chianti Classico vine: Canaiolo and Colorino.
Chestnut Flour from Monta Amiata:
The smallest, carefully hand-selected chestnuts are ground in an old stone mill and processed into a typically ivory-coloured flour with an unmistakable aroma.

Trebbiano is the novelty and the bet of the company; produced for the first time in 2000 with the aim of relaunching the Trebbiano grape in Tuscany. From a mass selection, a short pruning, a severe green harvest, and a late harvest, Capezzana obtains a very rich must, which ferments and ages in tonneaux, acquires elegant perfumes, and lends itself to long aging. The Cantina La Cura, owned by Enrico Corsi, is a young and dynamic production company consisting of fifteen hectares of vineyards in the heart of the denomination Maremma Toscana Doc and Monteregio di Massa Marittima, located in the high Maremma Toscana on the Tyrrhenian coast. The main varieties hosted are Sangiovese, Cabernet Sauvignon, Merlot, and Aleatico for a total annual production of 30 thousand bottles. The company favors an ecological approach to the processing of soil and vines, coordinated by the University of Pisa, which is also its main technical partner. The first bottles of wine date back to 1999.

A good balance of flavours, with a slight predominance of acidity, and aromas of yoghurt, whey, fresh grass and subtle floral notes, with a medium-to-low finish.

Rosso Manciano is a soft, firm cheese whose distinctive feature is that its rind is treated with a mixture of double-concentrated tomato paste and olive oil.
Rosso Manciano is a soft, firm cheese, aged for a minimum of 20 days, as stipulated by the Pecorino Toscano PDO production regulations, but it is at its best when enjoyed after 40–60 days of ageing. Treated on the rind with a double concentrate of tomato and olive oil, this cheese retains the flavour of fresh milk with notes of butter and a slight tang, characteristic of young pecorino cheeses.

When the cheese is cut, one can appreciate the aroma of fresh milk with hints of dried fodder. On tasting, it reveals a dominant acidity and unrefined lactic aromas, with traces of herbs and animal notes.
The rind is oily and wrinkled. It has an intense straw-yellow colour. Inside, the cheese has a lovely, bright ivory colour and a fine, regular texture.
Cutting into it reveals aromas of fresh milk with hints of dried fodder. The taste is dominated by acidity and unevolved lactic aromas, with traces of aromatic herbs and animal notes.

Podere Scovaventi was founded by Luca De Filippo and Carolina Rosi, who used to come here to retreat and regenerate in the breaks between theatre tours.
Having fallen in love with the countryside, expert gourmets, Carolina and Luca slowly began to restore the farmhouse, improve the soil and prepare preserves with the many products the garden offered them.
In 2015, they acquire olive groves in the vicinity of the company with other native varieties, thus taking production from family consumption to external distribution. In the same 2015, however, Luca passed away and Carolina decided to pursue this dream alone.
The company creates many varieties of products in its territory, pickles, jams, honeys and many others; the quality of these products comes from tradition and love for the land and its fruits.

Podere Scovaventi was founded by Luca De Filippo and Carolina Rosi, who used to come here to retreat and regenerate in the breaks between theatre tours.
Having fallen in love with the countryside, expert gourmets, Carolina and Luca slowly began to restore the farmhouse, improve the soil and prepare preserves with the many products the garden offered them.
In 2015, they acquire olive groves in the vicinity of the company with other native varieties, thus taking production from family consumption to external distribution. In the same 2015, however, Luca passed away and Carolina decided to pursue this dream alone.
The company creates many varieties of products in its territory, pickles, jams, honeys and many others; the quality of these products comes from tradition and love for the land and its fruits.

Terradonnà is located in Suvereto, in the Val di Cornia, a perfect area for wine production. A perfect area for wine production thanks to a soil particularly rich in minerals and a microclimate that, thanks to the recirculation of air from the sea (just a few kilometers away), maintains a mild climate all year round. The philosophy of the company stems from respect for the environment and the rhythms of nature. San Polo is situated on the south-eastern slope of Montalcino hill, at an altitude of 450 metres, the 22 hectares of the estate, 16 of which are planted with Sangiovese, are characterized by a dry, breezy microclimate, with wide diurnal and seasonal temperature swings. In the cellar, an admirable example of bio-architecture, designed to minimize energy consumption and environmental impact, the grapes are processed with artisan care to enhance the finesse of the Sangiovese aromas. The essence of San Polo, in fact, is to take the wines back to the vineyard that generated them, so as to express the concept of terroir to the full.
