The winery Rocca di Frassinello, is located in the high Maremma, near Gavorrano, and was designed by the famous architect Renzo Piano. Tenuta San Carlo
When tasting their rice, you can taste the flavors of the Maremma. Tenuta San Carlo is a unique place, an out-of-the-ordinary farm. Located in the plain of the Ombrone river, inside the Maremma Park, Tenuta San Carlo is immersed in one of the most natural and unspoiled landscapes of Tuscany. To produce top-quality rice, they listen to the land and respect nature, without wanting to dominate it. From the preparation of the soil, to the selection of the seed up to the timing of the harvest, they follow an ethics of sustainability and pay close attention to details in every phase of the process. “From our land to your table” is the slogan of Tenuta San Carlo, speaking of its rice. All rice is naturally grown and worked in stone to ensure maximum quality. In October 2015, Tenuta San Carlo embarked on the multi-year transition path to certified organic production. In fact, very strict ecological standards are followed in the production of rice and no herbicides, pesticides or fungicides are used. Instead, they prefer to start preparing the soil several months before sowing to naturally avoid the growth of weeds and other potential unexpected events that would hinder a healthy harvest. To improve the quality and fertility of the soil, they use techniques such as plant cover and crop rotation. Only two types of rice are produced: Carnaroli Rice and Ribe.
It has an intense ruby red colour and an elegant, persistent bouquet; in the mouth it is dry and balanced with plenty of body. The Riserva offers real concentration and depth of character.
The grapes are destemmed and fermented all together. Fermentation of the must takes place in cement vats for 2-3 weeks. The must is then transferred to steel vats to complete malolactic fermentation. After a couple of months, when the must has been clarified and decanted, half is transferred to steel vats, while the other half matures for 12 months in second-passage oak barrels.

La Selva Organic Farm:
LaSelva entered the world of Italian organic farming in 1980 in southern Tuscany, in Albinia – Orbetello (GR), a place that is still the heart of all its activities today. Mieleria Rossi Novaro was founded in the 1960s in Casentino. It was in these mountains that Novaro, the founder, developed a passion for bees and honey production. The settled business soon became nomadic in order to diversify the types of honey produced, searching for the plants and essences loved by bees. The hives were moved partly to Maremma, far from sources of pollution. Thanks to the proximity to the sea and the mild climate, it is possible to produce light-coloured honeys, such as sunflower, clover and sulla. Over the years, Novaro expanded his business and the ever-increasing number of hives convinced him to move permanently to Grosseto, while maintaining a close relationship with his homeland, where he continues to produce forest and chestnut honey. In the workshop at the headquarters, fruit is processed to produce extra jams, compotes to accompany cheese and fruit in syrup, as well as honey-based gastronomic specialities and much more. Aceto in Italy is (not) only made in Modena. The Natali family wanted to dispel this myth by starting to produce quality vinegar in Tuscany. With the arrival of the new generation in the company and the idea of exploiting the knowledge of natural fermentations that had always been used at home for wine, the production turned to vinegar. A winning intuition that in just a few years has led this company to become the most important in the region, with the Acetoscana brand. Sangiovese grapes are harvested in the Chianti hills. Vinification and fermentation, which are essential to obtain a quality vinegar, are constantly controlled and managed in a natural way. The key part of the process is a slow acetic fermentation at a constant temperature that requires long periods of time and continuous controls, carried out using a superficial static method, reminiscent of the ancient Orleans method.

Chianti Classico Castello di Monsanto is certainly among the best Chianti wines to be found. Produced from the estate's youngest vineyards, the Chianti Classico Annata combines the readiness and lightheartedness of the sip with the depth that Monsanto's soils give its wines.

There are two places at Castello di Monsanto that capture every visitor for the charm and the magic that is perceived: the Poggio’s hill and the historic cellar. Being able to transmit at least a tenth of the emotions you experience visiting the Monsanto winery is very difficult. The aromas, the echoes, the silences, the layers of noble molds make it a unique place that deserves at least one visit. The company has its origin from here. So from a climb on the Poggio and from a descent into the cellar, the idea of making a Cru in Chianti Classico was born for the first time. It was 1962 when the first 6,000 bottles of the Chianti Classico Riserva Il Poggio were produced. Of the 72 hectares planted with vineyards, between 260 and 310 meters s.l.m., 56 ha are in Sangiovese, the vine in which the company has deeply believed from the beginning. The Sangiovese clones present in the vineyards come from a mass selection of vines found in the vineyard Il Poggio, “the mother” of all the vineyards of Monsanto. In a small percentage are then present the two historical vines of the Chianti Classico vine: Canaiolo and Colorino.

The monastic community of the Monastero Di Siloe is located in Cinigiano, on the slopes of Mount Amiata. Pastificio Caponi is a historic pasta factory in Montepulciano, Tuscany. Founded in 1953 by Nonna Angelina, the company is now run by the third generation of the Caponi family, who continue to produce artisanal pasta of the highest quality using only top-quality Italian wheat and spring water.
The company is distinguished by its focus on tradition and quality, using only artisanal methods to process the pasta. In fact, the machinery used is that of yesteryear, which makes it possible to obtain pasta with a unique taste and texture, thanks to slow and careful processing.
Pastificio Caponi produces a wide range of pasta shapes, including tagliatelle, pappardelle, gnocchi and lasagne, all strictly handmade and available in different variants, such as egg pasta, whole wheat pasta and gluten-free pasta.

Tuna belly is the fatty part located in the ventral area of the fish, and is considered the most valuable and tasty part.

The conserveria tonnina takes its name from a specific processing of a part of the tuna fish typical of the island of Elba. The shop is located near the historic cove in Portoferraio, in front of the fishermen’s boats. Here, traditional recipes with the original flavour of the ancient Elban tradition are prepared and preserved, faithfully following the methods, customs and recipes of seafaring custom. One of the values that the Conserveria Tonnina boasts is the quality of the fish products, all caught in the sea adjacent to Elba and in Italy. The products are diverse and undergo specific processing, the most commonly used fish being tuna, anchovies, skipjack and mackerel.
